Mashed Vegetable for Winter, with CHICKPEAS & BEANS

- It's delicious, it's the 3rd year I've made it and this time I increased the portions because there wasn't enough for all winter.
For one portion I used the following weights, the vegetables are weighed before they are cleaned:
3 kg of capsicum
1 kg carrots
1 kg onion
0.5 beans
0.5 kg chickpeas
0.5 l of oil
0.5 l tomato broth
Bay leaves to taste (1-2)
Chili or ground pepper to taste
Salt, peppercorns, to taste
Smoked sweet paprika
Recipe:
Soak the beans and chickpeas overnight.
The next day, the beans and chickpeas are boiled. I made the beans into a paste using the grinder. I left the chickpeas whole because they didn't have a skin, I bought them shelled (for the one with the skin, I recommend making it into a paste).
I cut the onion into julienne slices, grated the carrots (I used the robot).
The peppers must be cooked on all sides, then put them in cold water to make it easier to remove the skin, remove the tail and seeds. Put through the mincer.
We put the pot/cauldron on fire and add the oil. When it starts to sizzle, add the onion (approx. 20 min), the carrots (approx. 20 min), a little salt to help the vegetables soften faster. Stir very often until the end to prevent sticking. Add the peppers and leave approx. 60 min. We put all the spices, taste along the way and add what is needed. Then add the beans and chickpeas and leave to cook for another 1 hour. Add the broth and leave on the fire for another 20 min.
Remove from heat and add preservative or aspirin and mix well. Fill the jars (the jars must be sterilized in the oven and left to cool, the lids are sterilized in boiled water).
After filling and closing the jars, put them in the oven for 30 min at 100°C.
