Well also just a lot of the younger folks (read, me LOL) don't really have time to spare for prepping a whole chicken when we also gotta juggle homework, studying, exams, and even work. Something relatively simple and easy with low prep like this that can get us 80-90% of the way to the full chicken recipe is perfect.

in my family we just chuck it in a mesh bag and leave it to hang dry until it's desiccated to the level you see here. it then goes into a container for storage

So, I made this and to my surprise it was delicious 😍🤩 I hope it's ok, but I added potatoes and sliced onions 😌 this is currently a household favorite now thanks to your dad 🥰 I have added this as one of the dishes to make for my family 💗

I just made this chicken, and it's rly good. Flavourful, and tender meat. I used green lemon zest , and added a little bit rice vinegree, bcuz it was not bright enough for me. Maybe bcuz i couldn't find Shaoxing rice wine, so i used Mirin instead.

Really delicious. This drumstick recipe is so good. Was craving it again and used chicken thighs - should have cut off most of the fat (wasn't thinking ahead). the rich fatty sauce would be good to braise tofu later on though when i run out of the rest of my chicken.

This will replace the recipe I was using. It uses way less soy sauce and taste like the soy sauce chicken I ate at my aunt's house as a child. THANK YOU!!!
I do very similar, but don't simmer the chicken. I season and cook in a broiler pan until done. Anything left in the pan goes to make stock for a future dish. As are all the saved bones.
So what im gathering from his comment about "we're skipping sichuan peppers, cinnamon and star anise" is that there was an invitation to add those if you want them at that point, because I do!

We use drumettes and chicken wings. The collagen from the wing leeches out a bit. We love the sauce over rice. It’s fatty, rich and umami.
