The pork is cut in big pieces,r ed in colour, extremely oily, lots of pounded red chilli, tomatoes, and they serve it with pickled dry red chilli. There is a similar Nepali dish. They make use of white peas instead of meat. It's called til chutney. You can the recipes on TH-cam. Enjoy.

The best way would be to smoke the meat up. That way you can store it up months.
