Most of them know perfectly well how a human thinks, Rick can be whatever he wants to be, but he will always be human, at least for some reason he never changed his human brain structure, We found out why much later, but It is precisely the most important part of the human being, and it is precisely what he has not altered until now, That alone is enough for the therapist to know perfectly how Rick reacts, how he will react to something and how he reacted to a situation before.
Therapy is one of those things that it doesn't really work if you don't want it to. Beth didn't want to be there, so she didn't see the value, whereas Morty and Summer actually wanted to address all of their problems, so they wanted to go back. That's why Rick also doesn't prefer it, he doesn't think he needs to work on himself because in his brain he's a god. I think he knows what therapy could do for him and he's not ready for that, which is why it won't work because he has to be ready.
True. Rick hates being wrong, and going to therapy would eventually make him realize his god complex does more harm than good and that he’s a selfish narcissist. Aka someone who shouldn’t be respected or looked up to. And you can see that in the very next episode because he can’t stand Morty looking up to the vindicators so much that he decides to get drunk, blacks out, and pretty much kills all of Morty’s heroes because he’s actually the most insecure person in the room and needs to feel like the top dog.
