Im glad you gave us the information on the Agava cuz I thought it was a natural sugar like honey. All these dishes look delicious. I didn't know port causes inflammation. Pork is a favorite meat of mine. Id replace the Italian dressing with broth. The dressing I like on salad but not with my meat.

I use to wash the meat too but some people said no you don't need to and you spread the germs or bacteria on too your counter surface. So I don't know.

The mustard actually helps break down the meat while it's cooking and helps keep it tender, pineapple does it too

Acid, such as mustard, help tenderize meat. It will also help a dry coating to adhere to the meat.
