Smoked Pork Belly Burnt Ends | Ash Kickin' BBQ

- In today's video, we are talking about what could potentially be the best bite in BBQ, and definitely is ONE of the best bites in BBQ. That's right, we are talking pork belly burnt ends! They are smoky, sweet, succulent, rich, fatty, and oh so delicious! If you've never made pork belly burnt ends, this is a MUST make for you! And if you have made them, well you still need to give this pork belly burnt ends recipe a try! The process is very simple, and as always I have the full recipe below, but basically you need pork bellet, seasoning (I recommend Ash Kickin' BBQ Honey Chipotle, link below to my rub), some butter, and some BBQ sauce! It's that easy! I cooked these on my Lone Star Grillz Pellet Grill, but you can cook this on any smoker, you just want to follow the recipe down below! So what do YOU think? Full Recipe:

-Slab of pork belly
-Ash Kickin' BBQ Honey Chipotle Rub
-Tailgaters BBQ Party Rub
-Butter
-BBQ Sauce
-Rib Candy (optional)
| Instructions |
Prep:
1. Cut the pork belly per the instructions in the video.
2. Season the strips of pork belly with a light coat of Tailgaters BBQ Party Rub, followed by a medium coat of my Ash Kickin' BBQ Honey Chipotle.

1. Set the smoker temperature to 275º F, and put the strips of pork belly on the smoker.
2. Smoke the pork belly strips until they have a good color, for me this took approximately 2 hours.
3. Once the pork belly has the color you want, cube up the strips per the instructions in the video.
4. Once the pork belly burnt ends have been cubed up, add 4 pats of butter, rib candy (optional), and BBQ sauce. Mix thoroughly, cover, and return to the smoker for 2 hours.
5. After 2 more hours, remove the cover and check for tenderness. If the pork belly burnt ends are tender, drain the braising liquid, and then cover the burnt ends with more BBQ sauce and toss to coat thoroughly. Return the smoked pork belly back to the smoker, and let the sauce tack up for 5-10 minutes.
6. After 5-10 minutes, or once the sauce has set on the smoked pork belly burnt ends, remove them from the smoker and allow them to cool.
7. Once the pork belly burnt ends have cooled, eat, and enjoy what might be the best bite in BBQ!

Too bad where I live there’s only a Safeway store and they don’t carry a lot of different meats especially pork belly. Recipe is great would definitely make some if I can find some pork belly. Have a awesome day.

Darrin, I currently own a PB Pro 850 pellet grill and I have learned so much from watching your channel. The PB850 has been an awesome unit for me but I would love to have more cooking surface so looking for a bigger smoker. Two drawbacks to the PB850 - ashbox cleaning requires taking out everything and the heat shield sits on an angle which I feel makes one side hotter. Do you have any suggestions of smokers to compare? I don't grill with my unit, only smoke so a straight pellet smoker would be right up my alley. Porkbelly bites look amazing and is on the to do list. Thanks again

I found that the first time I made these that the skin was way too hard and the fat wasn’t rendered all that well . What did I do wrong?
Leaving the skin on may have been part of the problem.
