I originally watched this when you first posted it but didn’t pay it much attention as you named it coffee cake, I don’t like coffee so I dismissed the recipe, it’s only now that I found it again after searching for this Bulgarian dessert and it’s not even got coffee in the cake, ie, I would very much enjoy it as it’s an Apple Crumble Cake. Yum...make an adult version with some rum! One of my favorite treats for holiday breakfast was when my Dad made Lüchow’s apple pancakes with a healthy sprinkle of rum to flambé. They were thin, almost more of a crepe, the way dad did them.

This was awesome. I did decrease the sugar from 1 cup to 3/4, and as Chef John suggested, I switched the greek yogurt to sour cream because I didn't have any yogurt at the time. I also added a teaspoon of allspice to the crumble mix. This was very easy to make. Chef John makes everything look easy, but really - you can do this one!
I wasn't born in North America and grew up with coffee cake that was actually coffee flavoured. Always throws me for a loop that (typically) North American coffee cake is simply a cake meant to be eaten with coffee, not necessarily flavoured by it
OHMYGOODNESS!! I made this last night, followed the instructions ALMOST to the T (in the printed recipe, it includes 2 tsp of butter for the "dry ingredients," I could only guess that was supposed to be 2 tsp of butter to grease the pan?), and not only did my cake smell heavenly last night, but the serving I just had now, with my coffee, was SUPERB!!!! (I of course had a smaller portion last night with a glass of milk - AMAZING!!) Thanks again, Chef John!
So glad I'm not the only one out of 4 million subscribers that looked at the recipe to make it. (Mystery butter was left out of mine) I just made it, and am not waiting to cool off. I bet this would be good with a little icing drizzled over it.
I made this last night and it was incredible. I didn't have sour cream or yogurt so I made buttermilk out of whole milk and vinegar and it worked really well.
I just made this recipe and it tastes sooo yummy! The only change I made was cut sugar by 50% and this sweetness level was perfect for me. The cake was moist and mildly flavored by the apples, it was the perfect accompaniment for the sugary cinnamon nut crumble.
You could probably cut the dairy in half too and maybe replace it with apple sauce or apple juice or half as much water or simply use less of the dry mixture.
This cake was so good (even when reducing the sugar for the batter to 3/4 cup/used full fat sour cream/Fuji apples) it made it to my picky-eater mum's clean plate club! She even showed the cake off to her friends this mother's day and asked me to make it again for future family gatherings! Thank you chef!
I made this for my mother-in-law for Mother’s Day. She said it was possibly the best cake she’s ever eaten, which says it all since she’s 84 years old! I didn’t get to see the cake once it was cut, but she said the layers came out perfect. It was a great cake to make, and as always, Chef John publishes well-tested recipes with clear and detailed instructions. I can not recommend this recipe enough, and I’m already thinking of making it with other fruits (hello - rhubarb!) and even berries. Also, I made it completely by hand like Chef John recommends, and it was no more difficult than using a mixer. This may change the way I bake. Thanks for another great, successful recipe Chef John!
About 3 years ago I found this recipe and made it in October just after picking up a huge bunch of apples from our favorite orchard. My family made me make it every week that month, and it has been our October tradition ever since. Thank you so much for sharing this recipe Chef John, it's amazing!

This coffee cake was a huge hit with my family. I served it for Easter dinner dessert. Keep in mind that if you're using Greek yogurt, you may need to thin it with some milk or buttermilk. I used Greek and it was a bit hard to spread, but just a little too thick. Next time I'll use 3/4 cup Greek yogurt plus 1/4 cup Buttermilk. I'm not kidding,...it's eyes roll back in your head delicious! It's easy, and much better tasting than any cake that has icing. Good served with whipped cream sweetened with a bit of Maple Syrup !!
Making this for the third time today! Made it once with yogurt and now with sour cream for the second time and I prefer the flavor with sour cream. Great recipe. Gave some to my dad who said it was the best coffee cake he’s ever had.

I have made this delicious cake so many times. Making it once again this morning. It's always a winner! The only change I make is I grate the apples (skins included) as I'm far too impatient to be cutting tiny dices lol. It always turns out fabulous - even when I alternate between yogurt and sour cream, or even pouring (whipping) cream soured with lemon juice. It depends on what's in the fridge. I recommend it to all - as I do ALL of chef John's recipes. Greetings from NZ.

I tried your recipe and it was great. It's very similar to a coffee cake my mother made us and her Bridge playing friends in the 1960s. She often served it with whipped cream for dessert or with butter on it fresh out of the oven, no microwaves, on Saturday mornings. Either way it was a real treat.

Great technique! Tried and came out good even without the eggs into the wet ingredients. Instead of butter I used vegetable oil. I admire the way you baked with simple tools. These days you get to see all kinds of high tech electric equipment in videos. Thanks Chef!
I made this for mother's day. It came out AMAZING. The only issue I had was it took almost an hour and a half in the oven (at 40 mins, the center was almost like custard)! I was using a glass baking dish (8x10) so maybe there were some conductivity issues? I was super worried it was going to dry out, but it was perfect, just took longer than I would have ever thought. Anyone have thoughts to why it took almost 2x the expected baking time? Also, I bake bread and haven't ever noticed my oven being wonky or anything. Edit: I am 99% sure I didn't mess up on any of the proportions or anything, that was the first thing I thought of when it wasn't close to done at 40 mins.
Made this recipe yesterday for mother’s day and here are my thoughts: Obviously it was absolutely delicious!! Earned some major Mom points for this one! it wasn’t overly sweet which my parents appreciated and the next day (today) it became even better somehow. So highly recommend making this the night before and letting it sit out covered for a couple hours to a day. Finally, I was wondering if there was any way i could have more apple flavor in this recipe for the next time i make it as my family and I are big fans of apples in baking. Can I just add another apple to the batter or will that make it too watery? Just wanted to say thank you very much Chef John for yet another great recipe that somehow manages to convince my family that their high school senior son is not an absolute clutz in the kitchen!!!
Tingle Matthews it’s just that to the rest of the world having coffee in the title of any recipe means in some form contains coffee in the recipe. I was expecting him to add a double shot espresso. I don’t like coffee so I was put off by the title only to come back to it after searching for this Bulgarian dessert, Apple Crumble Cake.

I made this using keto ingredients: almond flour, Swerve brown sugar and Swerve white sugar. I used the measurements called for and used pecans instead of walnuts. Turned out great!!!
You lost me at walnuts, can't eat them unless I dont feel like breathing anymore. However, I caught some inspiration. I might try a cherry and almond variation and see how that turns out.
Sounds good. Alternately, apricots pair well with almonds. If you wanted to make something very similar to Chef John's version, you can substitute pecans for the walnuts. They are close enough in texture and taste that I would use that substitution even without an allergy if I happen to have pecans but not walnuts.
Chef I did it this afternoon to receive a couple of friends with a traditional Brazilian 'cafezinho' and it was highly praised as consumed. Very nice. I'm going to make a lemony version with lime zest and lemon curd instead of the yogurt. BTW I have a trick for creaming and dealing with non-room-temperature butter: I substitute two tbsp for olive oil and the miracle happens.

I tried your recipe and it was great. It's very similar to a coffee cake my mother made us and her Bridge playing friends in the 1960s. She often served it with whipped cream for dessert or with butter on it fresh out of the oven, no microwaves, on Saturday mornings. Either way it was a real treat.
If you want to be the Jerry Rice of how fine you dice precook bigger chunks in a pan, let cool, and add to the batter.
I have been baking for years but never did my apple walnut cake come out so soft and moist..
Baked it twice and it was perrrrrrrfect both times.

The walnuts are also a superfood which makes this a semi superfood.
Cinnamon is also quite healthy, and an apple a day keeps the doctor away, so this is one of the best things you can eat.
Just a shame that the amount of sugar neutralizes all goodness. But apart from that it's a masterpiece

I made this for mother's day. It came out AMAZING. The only issue I had was it took almost an hour and a half in the oven (at 40 mins, the center was almost like custard)! I was using a glass baking dish (8x10) so maybe there were some conductivity issues? I was super worried it was going to dry out, but it was perfect, just took longer than I would have ever thought. Anyone have thoughts to why it took almost 2x the expected baking time? Also, I bake bread and haven't ever noticed my oven being wonky or anything.
Edit: I am 99% sure I didn't mess up on any of the proportions or anything, that was the first thing I thought of when it wasn't close to done at 40 mins.
He sits because you used a pan 2” too short. Was supposed to be in a 9X12” pan. Pan size will always affect your cooking time.

Made this recipe yesterday for mother’s day and here are my thoughts:
Obviously it was absolutely delicious!! Earned some major Mom points for this one! it wasn’t overly sweet which my parents appreciated and the next day (today) it became even better somehow. So highly recommend making this the night before and letting it sit out covered for a couple hours to a day.
Finally, I was wondering if there was any way i could have more apple flavor in this recipe for the next time i make it as my family and I are big fans of apples in baking. Can I just add another apple to the batter or will that make it too watery?
Just wanted to say thank you very much Chef John for yet another great recipe that somehow manages to convince my family that their high school senior son is not an absolute clutz in the kitchen!!!

I was confused, waiting for some coffee to be put in the mixture. In the UK a coffee cake has coffee in it.

Tingle Matthews it’s just that to the rest of the world having coffee in the title of any recipe means in some form contains coffee in the recipe. I was expecting him to add a double shot espresso. I don’t like coffee so I was put off by the title only to come back to it after searching for this Bulgarian dessert, Apple Crumble Cake.

I made this using keto ingredients: almond flour, Swerve brown sugar and Swerve white sugar. I used the measurements called for and used pecans instead of walnuts. Turned out great!!!
You lost me at walnuts, can't eat them unless I dont feel like breathing anymore.
However, I caught some inspiration. I might try a cherry and almond variation and see how that turns out.

If you wanted to make something very similar to Chef John's version, you can substitute pecans for the walnuts. They are close enough in texture and taste that I would use that substitution even without an allergy if I happen to have pecans but not walnuts.
Chef I did it this afternoon to receive a couple of friends with a traditional Brazilian 'cafezinho' and it was highly praised as consumed. Very nice. I'm going to make a lemony version with lime zest and lemon curd instead of the yogurt. BTW I have a trick for creaming and dealing with non-room-temperature butter: I substitute two tbsp for olive oil and the miracle happens.
