    This is Behind the Counter at Momoyaki Momo chan, a Japanese charcoal grilled chicken izakaya restaurant with a truly authentic local vibe, tucked away in one of the backstreets of the Sumiyoshi area in Hakata Fukuoka Japan. Aoki san started the shop 10 years ago after working separately as a restaurant manager. With over 28 years of experience in the food industry he decided to challenge himself, start his own business and follow his dreams. He strictly uses only Satsuma Chirandori chicken raised in Kagoshima. These chickens undergo an extensive 450 day free range rearing process which allows them to fully mature naturally and develop their uniquely rich flavor characteristic and exceptional plump texture. He uses a chicken oil called CHIYU in Japanese to grill the fire chicken and Ogatan, a charcoal relatively inexpensive but produces a strong flame which unlike more expensive charcoals produces his signature blacked chicken with a richer and smokier flavor.

    When uncle said he used to flee from challenges I could relate so much, but seeing his hardwork now inspires me to be constant as well. Truly appreciate that now he's so passionate about what he does that he doesn't even think about retiring. It's a remarkable quality in Japanese people. Also chiyu is so tasteful, anytime we bake chicken tights I use the rendered chicken fat to eat with rice and some peppers. The chicken broth boiling for 10 hours or more made me drool. Just love long-time cooking broths! Wish all the best to uncle and Paolo's family ❤️

      I don't personally agree with the idea of running from challenges. It sounds to me more like everything he tried to do simply wasn't for him.
      It's pointless to work with something you don't burn for. You'll do a poor job and only take up the spot for someone else.

    This actually means a whole lot coming from a man who said that he messed around a lot as a kid. He could easily think that young peoples' ideas are rubbish based on how he was, and he'd find plenty of people to tell him he's right. But he chooses differently. Good on him, and God bless.

    Oh man I’ve had this charcoal cooked chicken at this restaurant Tsukadanojo in Japan. It’s the best chicken dish I’ve had. Pure flavor and umami from the Jidori chicken and the smokey aroma. I can’t even imagine how good this Kagoshima chicken must be!

    Looks good! Kind of a smokier version of what we have here in Mie, where I live. We similarly cook it on a metal ‘net’ grill over a flame…but less dramatically so. Sweet miso sauce marinade is most popular. (In spite of our area being famous for wagyu, grilled chicken is what local people actually eat here.) Anyway, great content as usual, Paolo. 🍻

    I really really love these videos! I'm hoping to take a trip to Japan with my husband in November so I've watched all of your guide videos and I recently started watching these behind the counter videos. They're so fun and interesting! Your video production is top class unlike others with unnecessary childish b rolls and side camera angles with people talking off camera or their heads way too much in the shot, you produce an extremely professional finished product and that's coming from another pro video producer who used to do weddings and music vids etc. Keep up the good work as you've been doing them and hopefully you don't run out of subjects. The thumbnails are great too by the way.

    Paolo! Haven't seen any Made in Japan video about Japan's confectioneries. I think they're huge in Japan. And yeah you always feature Bokksu so maybe a made in japan or behind the counter video about that? Looking forward to watching it 😃

    The thing about this chicken is it looks so authentic. Plain sure but you know it'll taste fantastic.

    I can imagine the smells and the tastes. It was not until I visited Kyushu that i realized how good chicken from that region was. While Miyazaki is known internationally for wagyu and Kagoshima for kurobuta, both these places serve the best chicken dishes i have ever tasted. Grilled, karaage, nanban, in hotpot... more people should experience it but these chickens are hard to find internationally, and in fact even in Japan, short of specialty restaurants that use these chickens exclusively such as the one featured here
