Yes, sear it for flavor; then, cooked low and slow. The goal is to keep the meat above 140 degrees for as long as possible without overcooking it. At that temperature, collagen breaks down into gelatin, which renders the meat supple and tender, and lends the cooking liquid or sauce luscious, silky body

The one thing I would do is use the juice from the peppers and de-glaze and get the fond from the pan and add that to the crock pot. Don't want to leave any flavor behind.

This is absolutely one of my favorites! Alabama school system might not be the best, but you turned out great…highly intelligent and an awesome cook!🤗 Who cares how the words are supposed to be pronounced, just pronounce them with confidence. Most people don’t know anyway. 😅😂

Ohhhhh man!!!! I make this a few times a year, I usually season it up then put it on the grill to give it a nice sear then put it in the slow cooker. Man, I make sandwiches, or put it over rice or noodles, it’s also great to take to work for lunches during the week.
    Yeahhhhhh man!!!!!
    😎👍🏻👍🏻🔥🔥🔥🔥🔥🔥

That grill steps up the flavor profile by 10. I'll have to do that next time.

I wonder if adding in a nice fresh sweet onion would work well in this during the slow cooking process, I'd imagine it would add even more great flavor.
