Every horse in every game I have ever played where you can name your horse, has been Bessy. And I was so weirded out that Hosea's ex-mrs was called "Bessie" during the story, because whenever he brought it up I always thought he was talking about being in love with my horse.
Why Bessy you ask? Bessy was the name of my childhood dog. And then the name of my first car. And the name of my first cat... Who only lasted 2 years before being eaten by foxes. RIP to all the IRL Bessy's.
However, when my horse Bessy died in RDR2 after accidentally riding into a trolley train in St Denis, I sat on the ground a broken man. I couldn't believe she had gone. I took another horse and left it unnamed, out of pure respect. RIP imaginary Bessy that lives on only in my head.

If your horse dies you can quit and restart to get him back, although you'll lose a bit of progress.
