Crispy Pork Belly Sandwich | Pan con Chicharrón w Homemade French Rolls

- Who doesn't love pork belly? I grew up eating this delicious cut of meat and am always on the lookout for new, interesting and tasty preparations! Today, I happened to be in the mood for Pan con Chicharrón, a Peruvian sandwich, probably the MOST famous Peruvian sandwich.
This sandwich consists of fried crispy pork, a bright and vibrant onion salsa (salsa criolla), a aji amarillo mayo, some fried sweet potato all on a crispy French style roll. What is there not to like right?
For the bread, I used my Vietnamese baguette recipe. The only difference is the way I shaped them for this sandwich. I scaled and rounded them into 115 g dough balls. I have the recipe and video for you right here.

Bread Recipe:
500 g Bread flour
335 mL warm water (105-110F)
8 g kosher salt
7 g instant yeast
1 g sugar
Bake at 475F for total of 22 mins
Pork Belly Recipe:
1-2 lbs piece of pork belly
2 quarts water
2 garlic cloves
2 bay leaves
1 tbsp salt
1 tbsp cumin
1 tbsp black peppercorns
Salsa Criolla (red onion salsa):
1/2 a red onion
zest of 1 lime
juice of 1 lime
2 small Fresno chilies
2 tsp salt
Aji Amarillo Mayo:
2 tbsp mayo
2 tbsp aji amarillo paste
You will also need:
Sweet potato, I only used 1/4 of one but gauge accordingly
Some fresh cilantro leaves

Pretty much any pressure cooker will do. Depending on how much technology you want! I'm old school. But you can definitely use Instant pot and things that are similar.

if you don't have a pressure cooker how long should you braise the belly?
Usually for about 2-3 hours until tender.
