I can give you two hints about the onion. One those choppers work wonderfully with Cutting down the amount of tears. I don’t cry at all when I use it. And two my daughter gave me this tip along time ago is to set a little candle close to your Cutting board and burn it while you’re chopping. That has worked for me also.
Try putting your onions in the freezer. They are easy to chop. And also I chop onions and freeze them. when I need them they are ready to use. I want you to know that I really enjoy your videos. I'm going to make your chilli recipe. It looks so good. I am so glad and blessed to be able to watch and learn from you. Thank you so much.
Making this chili today without beans...to can up for future... my thought is I can heat up with some beans if I want that and can do the carbs that day. Its easier to add than to be picking beans out of a batch of chili!! 🤣 loving this idea! thank you Carter!!
I cook my ground beef in a cast Iron skillet on my charcoal Kamoto Joe grill. I have too much of a problem with my soaked and cooked beans still being too hard no matter how long I cooked them. So what I have found is that after my overnight soak I partly cook cook them in the Instant Pot and the finished product is wonderful - no more hard beans. I try to get them them about half cooked before adding the beans to my pressure canner. I am here because I have never pressure canned chili before. Whenever I make soup, chili, bean dishes; I always make a batch and them freeze them in vacuum sealed bags. So, now I am converting over to pressure canning for storage. Someday I will get into the freeze dry process. I also started using grass feed, grass finished beef from the local amish County meat market, Awesome resource - just paid $ 7.50 per pound for the grass feed ground beef.
Glad to see that others misjudged the size of the pot needed. My first chilli canning adventure resulted in the purchase of a 23qt pot to finish the job. Can't say it was a bad purchase because I've used it many times for fruits, stews, and sauces. It's just as easy to do an extra large batch to can and a meal or two.
This recipe was great! I made it without beans in a quart and added a separate jar canned of a triple bean (Pinto, Kidney, and black) and some broth. It was a hit!
The only thing that saves me from tears when cutting onions is 1. someone else cutting or 2. a snorkeling mask. I made chili last weekend with plant based ground meat substitute since it was something the whole house could agree on, but, as of Thursday, the vegetarian child has left for new opportunities and the household can return to having real meat in meals. This is a good opportunity to use up some of the hamburger in the freezer, so thanks for the inspiration, Carter. I have that meat masher in my Amazon cart. Maybe it, or other products you recommend, will be included in the Amazon spring sale? I don’t have an affiliate account to check it, tho.
Yes. Someone else cutting them works for me! The meat masher doesn't appear to be in the Spring sale; however, don't pay its current ridiculous list price. I paid $12 for it. The current $17 is crazy.

I absolutely love your recipe content. It’s like hanging out and having a conversation with a good friend. You and David are both great! As for chili with beans or without, I’ll go either way, but it must be a heavy sear prior to completion with either or. Hot, hot, meat sear.
I love this video. The taste test at the end was awesome! We don't use a lot of onions in my house except for salsa. But when we have to chop onions, i have a Tupperware chopper that i use, no tears. We also have that meat masher, but we got ours at dollar tree. I saw a lot of people use it but i wanted to really see if it was worth it without spending a ton. We've had the one from dollar tree for 2 years now. Thank you for another awesome video. I love your kitchen
Thanks so much, Pamela! I have an onion chopper too, but I'll be darned if I can ever remember to use it! Good for you on the dollar tree masher. I just looked at the cost on Amazon today on the one I have, and it's ridiculous!
Hello, i was so enjoying your "challenge" videos that i decided to give some of your other videos a watch. This chili recipe is how i am going to make it next time. I have never tried with some of these ingredients but it sure sounds delicious and will definitely change up the flavour of mine. Thank you so much for sharing.
I just made this recipe and it is DELICIOUS. I did not have to adjust anything. First time making chili. Will definitely make more. Thank you so much. EDIT: I also did not have chile ancho in powder in the house, but went to the store and found packages of dried whole chile ancho and put it in my Ninja blender and voilá did not have to buy it online, which was wonderful, otherwise, would not have been able to make it as fast as I did.
I like the looks of this chili recipe canned or otherwise. Also I like the fact that you have incorporated beans into the recipe if desired. I will be making this chili and will can several jars. I plan on making the entire batch with beans added into the pot of chili. Thank you. PS: Next time you slice and chop a hot onion perhaps David will at least offer you a shoulder to cry on.
I love chili! Love beans too but for some reason I always find that kidney beans are a bit tough. The white kidney beans however are okay. I usually put 2 different beans in. Since I canned so many I might just put them in after like yourself. I like a dollop of sour cream on mine as it takes the heat down a bit. The color of that chili when you pulled it out of the canner was incredible. That adobe spice really did it. I must try that. Thank you for the recipe. Nice to see David as always. Cheers!
Thank you Carter. I am team No Bean. Texas Chili for a Texas girl. Looks beautiful. Love your new kitchen. Lots of space to can. David loves his chili. Have a great week.
One of my favorite freeze dried items is my chipotle in adobo. They are shelf stable, and I do not have use a whole jar or store a partial jar in my fridge. I love a pinch of this seasoning in my scrambled eggs.

Hi Carter! I ran across your channel by ‘accident’! Ha, I love your way of working, similar to myself. Onions are also hard for me to cut without crying. I recently tried an idea I believe will help you too. First a little science: the offending sulfuric acid is attracted to moisture, our eyes are moist. So I wet a paper towel, fold it in half and place on chopping board; sulfuric acid will go to the moist towel and not rise up to your eyes! Hope this works for you! ❤
I’ve got to put up some chili! I’ve made it in batches and put it in the freezer but I’ve been wanting to can some. Freezer space fills up so quickly! Thanks for sharing this and all of your tips!
It's always a good one to have on the shelf, Sheree! You are so right about the freezer filling up fast. Every time I get a little breathing space in there, it gets filled up again.
Hi Carter! My family has a Texas brick chili made from suet. It has been in the family over 100 years. I think they owned a restaurant. It made 10 bricks. One brick to a pot of pintos or kidneys. That's a lot of chili with beans lol. Yours looks great. I'm heading out in the morning time to visit that baby of mine that is almost a toddler. Spent the week freeze drying slaw with carrots, berries, mashed potatoes, chicken salad, mushrooms, and onions. Still have 3 loads in freezer to go in when I return. Have a wonderful Easter.
Btw, 24 potatoes went into the beds as did broccoli and bok choi. Asparagus is coming in, onions garlic and celery all growing well. The green house herbs will need to be picked and dried again and next will be peppers tomatoes artichokes and green beans.
I had to look up brick chili! I bet your family recipe is fantastic! Have a wonderful time with the grandkids. I hope your local family has committed to watering the garden and greenhouse while you're gone. For the chicken salad, did it have mayo in it? M potatoes, broccoli, cauli, kale, cabbage, spinach and swiss chard are in as well. The garlic is doing great, and my onions are hanging in there. Happy Easter!
Very nice! You may have inspired me to make canned chili! We do NOT like kidney beans, but, since we have discovered the Anasazi beans, we are are enjoying them again. I think they will make a perfect chili bean. Thanks Carter, and David. 😊
I will be doing a tour as soon as the fridge is installed. They finished punch out items on Friday, but the fridge is delayed until end of April. Can't wait to show it to you!
That looks yummy! Thanks for sharing the recipe. I've read that holding a match (unstruck) between your teeth helps with tears. Something to do with the sulphur in the match tip.
Stewed tomatoes are fine. Tomato paste is also ok, as long as you don't get it too thick. There's something about very thick tomato products that want to misbehave in the canner. It will thicken up a bit as it processes and then sits on the shelf, so just be judicious with the tomato paste.
I bought my brother some onion glasses for him to use when he’s making his own horseradish. If you’re cutting that much onion, you might want some of those! Lol
@@growandpreserve Thank You so much for your reply I love Carters channel and her ideas she’s one of my favourite s I’m 81 and I’m still canning !!! And I love love chilli !! Thanks again from Canada!!
Carter I have a question? I am soaking some pintos overnight to can tomorrow. This will be my first run. I have noticed that about half of the beans are shedding their skin and splitting? Is there something wrong with the beans? Should I not can these? Please help. I also bought some meat to can also.
Hmmm. I'm not sure why they're doing this, but I don't have experience with pintos. I would worry about them getting too mushy in processing, if they've shed their skins. Wish I had a better answer for you.
you two are so cute! love how you anticipate Davids response to the taste test. think i will make this recipe next time i can chili. love your ovens! will you be doing a kitchen reno vid?
Looks delicious,I will try your method my husband loves beans me not so much so if I want to use canned black beans do I rinse the beans and add to the chile
She said not to use canned beans unless you’re going to eat it right away. If canning, you need to use dried beans that are soaked overnight. If you use already canned beans, they might turn to mush canning them twice.
Carter, I really really appreciate the extreme research, time and sacrifice (ONIONS!! 😩😭😉) and sincere honesty you put into each and every recipe/video! You are amazing!! It's like experiencing basic culinary knowledge from it's most humble beginnings, INEVITABLY evolving into the FINEST FIVE STAR restaurant cuisine😋!! It gives me confidence to try different things. Things I always thought were beyond my hillbilly palate and expertise😂😉. THANK YOU SOOO MUCH!!!!!❤❤
Hey, Jenny! I love my Presto Electric pressure canner! As far as I know, there's just the one size at the moment: amzn.to/3WACyMf. It can hold 8 regular mouth pints, or 7 wide mouth pints or 5 quarts.
Was there a reason why you used dry soaked bean vs canned beans? Is it because with the canned beans, with it being the second time they are canned that the texture would be too mushy? Doing research before trying to can my own chili! Thanks
I had some cans of tomato sauce in my pantry of the same brand as your diced tomatoes and it did the same thing as you described..it actually hurt my hand so I went through the remaining ones and found one with a slightly pumped up lid that I hadn’t noticed on the one I opened. I tossed them both. I was trying to work through those that I purchased as my tomatoes are looking like a bumper crop and I plan to can diced, crushed and sauce from my tomatoes.
Wow. Good to know, Gayla! I do have a couple cans left from that box. I will double check them today. Woohoo to your bumper crop of tomatoes this year! So exciting!
I will! I also ordered a big order from Wallaby; I received everything yesterday, and I can't wait to get started on mylar bag preserving. @@growandpreserve
Carter...I love your canning videos. I am a big canner and love having the pantry stocked. Question... someone gave me a gallon can of Wolf Chili with NO Beans. I want to break it down to half pint jars to use for chili dogs. Can I just hot water bath it 25-39 minutes?
That's a lot of chili! I would still pressure can for 75 minutes. It'll be exposed to whatever is floating around in the air as soon as you open it. It may break down a bit at full processing time, but to me, hot dog chili is a bit more broken down anyway.
You may, yes. Let's think about the processing though. The zucchini would likely mostly dissolve (which might be a good way to sneak it in!), but the shrooms and peppers should maintain form for the most part.
Have you ever made a chili from leftover smoked brisket? That's the best I've ever made. My husband makes chili once a year (giant pot) and he is very big on using fresh peppers. He uses habanero & jalapeños. If they have any, he might add poblano. He also uses powders. He makes so much that it's not a knock your socks off. He uses kidney beans after he takes out some to have with no beans. He does the all day simmer. For some reason, chili became his favorite thing to cook but only once a year because he makes so much. Some goes to our daughter and the rest goes into the pantry and freezer.
Hello I am new to the channel. I just found you tonight and I am excited to learn about canning and recipes for canning. I just purchased my first canner it is the electronic presto. Looking forward to trying and canning this recipe. I have never used a canner before but I would like to try this recipe. If I used canned kidney beans from the store with this recipe and then canned them would they turn to mush??
Welcome! Congratulations on jumping into canning! You will love the Presto Electric canner. It's become my go-to pressure canner these days, and I never expected anything to replace my All American stovetop canner. Regarding the canned kidney beans...I do think they will be very mushy. Essentially, they'll be re-cooked for 75 minutes under pressure, if you add them to this recipe. The soaked dry beans are very easy and come out with a great texture. Do let me know if you give the recipe a try. Hope you find lots of recipes that appeal to you on the channel!
Thank you so so much for this great advice. I look forward to learning so much from you. I am single and I love how you show canning for the quart and pint jars ❤️. I want to learn how to can meals and ingredients. I am so excited to learn this.
I do have one comment that may be contrary to your opinion. It is my belief that tomatoes are an integral part of a Chili and I love to celebrate them when I make it. Seeing how many tomato products you put into this i believe they are a star as well and maybe should be celebrated as much as the ground beef.
Oh a quick note to you Carter. I purchased the "Onion Goggles" on amazon and boy do they work. I ordered the lime green frame... not to classy but no more tears. Cheers
I like chili with beans and ground beef but I also love the Texas chili which does not have beans. When I make chili with beans I use black beans and small red beans. I have a recipe I have used for years it’s a family favorite.
1/2 cup uncooked beans is a lot in a pint jar with such a thick sauce. Seems like the sauce should have been thinner for those. Beans are funny. They continue to absorb liquid over time as they sit on the shelf after processing. Maybe consuming them within a month or so, it would be ok, but I would make the chili thinner for long term storage. Looking forward to trying this recipe. Bet it will have a fab depth of flavor. Thank you for posting!
We make ground beef with pinto beans: 5 lbs. 70/30, 1 lb. onion, 1 lb. soaked beans, chili powder, cumin, onion powder, garlic powder, Mexican oregano. Near the end we add salt, and Hatch chilies. We also make an old recipe of Craig Claiborne’s, Real Texas Chili. Half beef chunks, half pork chunks, NO beans unless on the side. Carter, did you try running a fan over the onion while peeling and chopping it?
I've had a can of Campbell's Cream of Chicken soup do the same thing to me when I opened it. It was not past the "best buy" date either. Like you, I tossed and did not use it. Something is definitely not right when that happens and I was not taking a chance on anyone in my family getting sick over it. The chili looks delicious btw!
I would consider using my fat separator and be able to use the meat juice; unless I had something else to use it for. There's always a choice, right?!! Thank you for your great recipes!
Although there are people who will water bath low acid foods, I'm personally not comfortable with it and have no experience there to guide you. So sorry!
Thanks, Carter, for sharing this recipe. Personally, I like small red beans or small light red kidney beans in chili. I like tomatoes, but the ratio of meat & beans to tomatoes in this recipe would not make my tummy too happy. Otherwise, I will be using your recipe soon to can up some chili, but a bit more beans per jar, and a little less tomatoes. Your kitchen remodel is gorgeous, but your older one was beautiful as well.
I would need to review the ingredients to give you my thoughts on safety, but I will say that you will likely be quite disappointed in the texture of fully cooked beans that are then pressure canned. If I had extra cooked chili with beans, my first choice for preserving it would be the freezer.
Amazon sells onion cutting glasses that looks like glasses and go on like glasses. They are really goggles that look like glasses. They work and they are cheap.
Use a steel on your knife before you cut your onions. The sharper your knife is the less rupturing of cells and less onion juice squirting into the air around you will happen.
some onions just have a really strong oder. I always get yellow onions. your recipes look wonderful. I'm going to try the chili and can it but not with hamburger. I don't like the texture. thanks for sharing with us.
Mild chili with beans for the win! I put 16 pints on the shelf this winter to use all year. Thanks for more great ideas.
Good for you, Tracie! 16 pints is probably about what we need as well.
Thanks for the reminder. I have a chopper that helps a little, but I always forget to pull it out. I'll definitely try the candle trick. Thanks!

That looks yummy! Thanks for sharing the recipe.
I've read that holding a match (unstruck) between your teeth helps with tears. Something to do with the sulphur in the match tip.
Thanks, Dannie! Not sure I could make that work on camera, but I'll try it sometime when I'm not filming.
Can we use canned stewed tomatoes and add extra tomatoe paste safely?
Stewed tomatoes are fine. Tomato paste is also ok, as long as you don't get it too thick. There's something about very thick tomato products that want to misbehave in the canner. It will thicken up a bit as it processes and then sits on the shelf, so just be judicious with the tomato paste.
@growandpreserve thank you so very much for responding and wisdom. 🙏💜
This recipe looks amazing!
It's a great one!
Our family loves chili 😋. Thanks for sharing 👍.
My pleasure 😊
I bought my brother some onion glasses for him to use when he’s making his own horseradish. If you’re cutting that much onion, you might want some of those! Lol
Thanks, Gwen. I did recently buy some "lab" glasses that help a bit.
I love my onion glasses.
I got them from Paula Deen 15 years ago.
We are both. It depends on what it's being used for. I love Brian Langerstrom too. I like his weeknight meals
Brian is hard to beat!
I’m in Canada where do I find Brian Langerstrom ?
Here's Brian's channel: www.youtube.com/@BrianLagerstrom @@judihayes4286
@@growandpreserve Thank You so much for your reply I love Carters channel and her ideas she’s one of my favourite s I’m 81 and I’m still canning !!! And I love love chilli !! Thanks again from Canada!!
Thank you, Judi! @@judihayes4286
Can’t wait to make this recipe!
Great! Keep me posted, Theresa.
@@growandpreserve the skins are tough too. I don’t want to go through the process and end up with a lesser product. I am worried that I will?
you two are so cute! love how you anticipate Davids response to the taste test. think i will make this recipe next time i can chili. love your ovens! will you be doing a kitchen reno vid?
Thanks, DeeDee! I will definitely do a kitchen reno tour as soon as the fridge comes in. Can't wait to show you around!
THANK YOU SOOO MUCH!!!!!❤❤
Jeanne, you are so sweet! I'm so glad to have you here!
Hi! Loved the video. What size is your Presto Canner? You sure could put lots of cans in it :)
Thanks
Exactly.
Looks great! Thank you for sharing. I need to do this now! Lol. Have a great day!
Thanks, Lori! Let me know if you make it.
Carter that Chile looks great. Question are you allowed to put vegetables in your Chile for canning? Say mushrooms, zucchini, sweet peppers, .....
Wow. Sounds like you have your chili needs covered!
@@littlemscrafty You've come to the right place! Feel free to ask questions whenever you have them. It helps everyone.
I do have one comment that may be contrary to your opinion. It is my belief that tomatoes are an integral part of a Chili and I love to celebrate them when I make it. Seeing how many tomato products you put into this i believe they are a star as well and maybe should be celebrated as much as the ground beef.
You make a good point, Fred. I think there were 9 tomato cans, not counting the tomato paste.
Ty Carter! I made the Texas chili... and honestly I like it better with beans
We can still be friends. ;-) Give this one a shot, if you have a chance.
@@growandpreserveI appreciate that you are funny and not TH-cam sensitive!
@@growandpreserve😂 your so funny! Just thought I'd chime in on the beans or no beans subject 😊
Oh a quick note to you Carter. I purchased the "Onion Goggles" on amazon and boy do they work. I ordered the lime green frame... not to classy but no more tears. Cheers
Good to know, Sheila. I just bought some "safety glasses". We'll see if they do the trick.
I like chili with beans and ground beef but I also love the Texas chili which does not have beans. When I make chili with beans I use black beans and small red beans. I have a recipe I have used for years it’s a family favorite.
It sounds like you have all your bases covered, Dani!
Sounds great! Haven't tried the fan because it will interfere with the audio. I'll try it some time when y'all aren't with me!
I agree. Just not worth the risk. Good to see you, Steve.
Looks yummy!
Thank you 😋
If you have a gas stove, turn flame on and cut onions next to the flame. The flame attracts the onion fumes. I've tried this and found it works.
I don't think I've heard that one. Thanks, Jenny!
Or light a candle
Would corn be good in chilli
I think corn is good in everything! ;-)
Hi. Great video. Can you tell me the model and size of your presto canner please.
This is the exact one I have, Jean. amzn.to/3Turqib
I would consider using my fat separator and be able to use the meat juice; unless I had something else to use it for. There's always a choice, right?!! Thank you for your great recipes!
I add my beans when heating.
That works!
Hi Carter, I'm thinking about buying the Presto Electric Canner. Could you tell me how many wide mouth quarts it holds?
Yep! It holds 5 quarts (reg or wide), 7 wide mouth pints, 8 regular mouth pints or 10 jelly jars.
State of a canner can you use hot water bath
Although there are people who will water bath low acid foods, I'm personally not comfortable with it and have no experience there to guide you. So sorry!
With Kidney beans for sure!!
My husband would agree!
Sounds like a good plan, Grace! Thanks for the kitchen note. I'll show the whole thing when it's finished in a few weeks.
If only Chile with beans is wanted, can the soaked beans just be placed into the chili mixture and ladeled into the jars?
Yes!
Do not cut the root off until done chopping. This help with burning of the eyes. Works for us.
How did you pressure can it?
75 minutes for pints
when i do this how long do i water can it for please.
I'm sorry, Susan, but I don't water bath low acid recipes so I'm not sure how to guide you there.
@@growandpreserve No worries thank you hope family is well.
I add a can of Hunts pasta sauce...it thins it out but doest make it watery
Run the liquid through a fat separator and put the broth in the chili for lots of flavor
You could use a fat separarater for when you are canning and chopsticks in debubbling instead of spoon
True! I have one I love. Good thought.
Can I safely can chili that I made a lot of but has already been cooked? With beans
I would need to review the ingredients to give you my thoughts on safety, but I will say that you will likely be quite disappointed in the texture of fully cooked beans that are then pressure canned. If I had extra cooked chili with beans, my first choice for preserving it would be the freezer.
Better Than Bullion makes a great Chili base too - not as much salt as their bullion.
Yum!
I wear swim goggles when I cut onions. It might look funny, but it absolutely works.
If it didn't leave me with racoon eyes for the rest of the video, I would definitely do that too!
I heard there are goggles on amazon for when you are cutting onion from Little Mountain Ranch on youtube
You're right. I'll look for them. Thanks for the reminder!
I will be using your recipe because i can't do spicy hot foods.
Hope you love it!
If chopping onions bother me, I just take a big drink of cold water and it stops the burn. :)
Really? That's one I haven't heard. I'll try it.
I've never tried it before but I heard that if you have a fan blowing you won't get as much onion in your face.
Thanks, Sarah!
I'm a with-beans girl... no matter what my Texas relatives say...lol!
Funny!
Pumpkin, why didn't you use your chopper?
Because you weren't here to remind me!
@growandpreserve 😉 now you acting like me.
❤
Amazon sells onion cutting glasses that looks like glasses and go on like glasses. They are really goggles that look like glasses. They work and they are cheap.
Excellent. Thanks!
Contacts or swim goggles work for cutting onions
I just ordered some "safety glasses". We'll see!
Can you show us a vegan chili?
Hmmm...probably. Let me give that some thought. Thanks for the idea!
Use a steel on your knife before you cut your onions. The sharper your knife is the less rupturing of cells and less onion juice squirting into the air around you will happen.
Thanks for the tip, Scott!
went and got myself a bowl but sadly its only a video
Aw, Emilee! Come on over!
I keep my onions in the fridge and don’t have an issue with tears.
Maybe I need to keep the onions in there longer? I'll try again.
some onions just have a really strong oder. I always get yellow onions. your recipes look wonderful. I'm going to try the chili and can it but not with hamburger. I don't like the texture. thanks for sharing with us.
