Finally tried this tonight. Quartered boneless/skinless thighs seemed perfect. To give it some appeal to the kids I put some sliced carrots in. They were deliciously sweet and soft. The garlic cloves had the consistency of mashed potatoes. The kids ate it up. Thumbs up all around. Recipe is a keeper. Thanks. Edit: The fermented black beans are a little scary but just go with it. You'll see.

Made Soy braised chicken last night, the recipe called for just using water or stock, but two things crossed my mind, Beer which is what I went with as I had it in the house, the other was coke, glad to see I wasn't insane and soy and coke chicken is actually a thing........time to cook another chicken I guess : ) Here's what I used for the recipe Marinade chicken in Dark Soy, ginger or galangal, garlic, Schezuan pepper corns crushed, and whatever other spices you fancy, for 3 hours at least turning regularly (Wished I'd left mine overnight in hindsight). Deep fry whole chicken in a wok til crispy on both sides ladling oil all over the bird to get everywhere nice and crispy. remove from pan, drain off oil (carefully) and give wok a wipe. Add the marinade, beer, some chicken stock if desired, and chicken back to the wok, bring to the boil and then reduce to simmer and cover for about 30-40min or until cooked............absolutely amazing, had some in a pita with shredded asian greens and saracha just now, totally going back in for seconds, and probably thirds

( aka herbal medicinal cooking ) my departed father, we also par time herbalist. when we were young, he made lot of those , to cure our influenza fever, making tonic drinks and for other health remedies .but i only learn some, like making tonic drink with black chicken and herbal ingredients. only very few viewers will be interested
Rensune there are lot of those, but in chinese languages, including very good chinese cooking channel , also in chinese. this is why we don't see them, unless we able to type chinese characters.
I'm pretty sure your not aware about keeping raw meat separate from cooked meat coz you just cross contaminated your food by putting cooked chicken in the raw chicken plate that u used b4 not to mention you didn't switch out your spoon from touching uncooked to cooked meat. You need to learn some food safety handling process otherwise your gonna food poisoning.

( I am stand corrected, i am very much welcome, constructive criticism) But look at the end of this video. the chicken and other ingredients are braised for 20 minutes at 212 degree Fahrenheit boiling point. More than enough to sterilized unwanted micro organism. Thanks for your concerned and most of all thanks for watching.
