Bubble Milk Tea Recipe (w/ Tapioca Pearls)

    Originally from Taiwan, later became popular in HK and then swept all over China. If we hang out with friends in the weekend, bubble tea is the must-have drink. In this video, I am going to show you how to make the chewy bubble pearls from scratch.

    Ingredients for the bubbles [3-4 serving]
    - 60 grams of water
    - 100 grams of tapioca starch [Amazon Link: geni.us/qvN71AN]
    - 60 grams of black or brown sugar [Amazon Link: geni.us/MhitrDw]
    - 1/2 tsp of Vanilla extract [Amazon Link: geni.us/DYiKSW]

    Ingredients for the milk tea [3-4 serving]
    - 15 grams of loose black tea or tea bags [Black Tea Amazon Link: geni.us/FDZHl]
    - 1 liter of milk
    - 3-6 tbsp of sugar
    INSTRUCTION
    - In a saucepot, add brown sugar, water, and vanilla extra. Cover it and bring it to a boil. Add in 1/3 of the tapioca starch immediately. Stir to thicken the sugar liquid.
    - Turn off the heat and add the rest of the starch. Mix thoroughly. Do it quickly and try to gather all the starch together. Transfer it to a working surface. Knead it by hand until smooth.
    - Roll the dough into a 1/5 of an inch thick sheet. Slice it into strips and cut it into small little cubes. Get a bowl. Dust some tapioca starch in it so when you collect the little pearls, they don’t stick together. Then you just shape them into little balls. This is optional. It takes a lot of time to do it. But if you don’t mind the shape, you can just leave it like cubes.
    - Put them in a sieve and shake off all the excess starch. If not, when you boil it, the starch will thicken the water and it will be a bit messy.
    - You want to use a big pot and lots of water because tapioca balls need a lot of space. They like to stick to each other.
    - Add the pearls in. They will sink to the bottom immediately. Keep the flame on high. Gently stir them so they don’t stick together. Continue doing this for a minute. You will see all the pearls are floating on top. Then cover the lid. Ture the heat to low, let it cook for 4 minutes.
    - during this 4 minutes, you want to open the lid a few times and give it a stir because they always like to stick together.
    - Turn off the heat and let it sit in the water with the lid on for another 2 minutes. Take them out, put them in ice water for a little extra chewiness. the color was brown, now they become even darker after the ice bath. Take them out again. Try to get rid of the excess water. and add some brown sugar. You can also use honey or syrup. It is kind of like a lube, without it, the bubbles will get dry and sticky to each other. Now, you have your bubble pearl made. It is handmade so it won’t be perfectly round like the store bought ones. It will only last 2 days in the fridge for the best texture. So, better to make it fresh and eat it fresh.
    - Now, let’s make the milk tea. It is so easy. I am using my loose black tea that I brought from China. You can also use tea bags. Just follow the instruction to see how many tea bags do you need for 1 liter of liquid. Because I am going to use one liter of milk. Add in the tea. Give it a stir. Bring this to a slight simmer, not a full boil. You can see the small bubbles coming up. Then turn off the heat. Let the tea sit in the hot milk for 15 minutes to maximize the tea flavor. 15 minutes later, the tea should change color and now you can season it with some sugar and bring it to a full boil. Drain out all the tea leaves. Them you have the milk tea.
    - Now you can put your bubble milk tea together. It can be served hot and cold. Imagine holding a cup of warm bubble milk tea in the winter, that will be so comfortable.

    10/10 boba recipe!!! Delicious!
    Btw if any other Americans without a kitchen scale want to do this: 7/8 cup starch, 1/4 cup brown sugar, 1/4 cup water and a teaspoon vanilla. The milk tea is 4.25 cups milk (I did 4 because I’m lazy), a table spoon tea leaves, and I personally used 1/4 cup sugar.

    Lots of recepies I've followed before none are happened.
    Cause they don't properly explain during the boiling of sugar n mixing with flour. I'm not good at cooking n most of my families n friends never make this but they keep asking me to make this for them. Nearly 5kg of tapioca flour has been wasted 😂😂

I’ve had it in so many countries, but Taiwan serves THE BEST bubble milk tea in the world ❤️ I lived there for 61/2 yrs and I miss it!     Rolling all those balls is definitely one of those jobs its nice to have 2 or 3 kids in the house to do it for you. Thats the kind of stuff kids love to help out in the kitchen doing. BTW, I work for a restaurant supply company in a warehouse, those things are a pain. We sell them in big plastic containers and they break open really easily and they make a huge sticky mess.

    I made this today but my pearls are very light color... The brown sugar here in Greece is light. Next time gonna get the dark sugar. Took me almost 3 hours to shape .

      Does it taste good even with light brown sugar? I want to do this, but where I live it's hard to find the dark one too nowadays.

    I haven't tried this yet, as I'm waiting for my tapioca starch to come in, but this recipe looks WAY easier to follow than another video I looked up. I like how thorough you are with the explanation of each step. I can't wait to try this next week.
