tips: 1. make sure ALL the brown sugar is dissolved before adding in cornstarch 2. don't wait until it cools to start rolling them into balls 3. make sure the water is boiling when cooking the balls or else the balls will melt into the water 4. as said in the video please stir the balls while in the pot I've made boba many times and once I forgot to stir and I had to scrape it off the bottom 5. ice water bath is so important if not done the balls will all stick together 6. if your pearls aren't super black like the ones from the shops don't worry they use food coloring which is unessacary if they are super light you didnt add enough brown sugar or the sugar isn't strong enough hope this helps good luck making

I was afraid it would not be chewy, but it was the same, if not MUCH BETTER, than store bought bubble tea boba! To anyone trying to make this: - This is amazing, don't be afraid to try it! - Follow the instructions EXACTLY, step by step - Be patient at 1:05, it WILL turn into a dough like texture eventually, I promise :) - I used a mixture of light brown sugar and dark brown sugar. According to the comments, you should be able to get away with granulated sugar, light brown sugar, or dark brown sugar.

I made them yesterday w white sugar and more cornstarch cuz it wasn't turning into dough and everything worked out fine except when I finished making them they weren't squishy like really boba- im gonna make them again today but im gonna boil them for longer so they become more transparent, I hope it works :) I can't seem to make the inside of my boba pearls to cook :(

I've just finished making these and I'm having them with an avocado shake. It went pretty well! The making of the dough when smoothly, it stayed liquid for a while and then started thickening rappidly, like when thickening a sauce. They didn't melt while cooking, I waited for a strong boil and stirred the whole time. I substituted most of the sugar with white because I ran out of dark, so I suppose the taste is a bit different. And I didn't bother rolling them into balls, I tried a couple and it seemed like it would take a pretty long time, so I chopped the snakes in small cubes. Doesn't change anything, you just probably can't fit them through a straw. However, they are tasty, firm and chewy, not slimy, and pretty pleasant to eat. I saw some recipes for potato starch noodles, I'd guess the texture is pretty simmilar.

when you have formed them in a dough you can store it in a plastic wrap or a plastic bag.... but i recommend you to keep it for only 5 days or else it will mold hope this helped

Ok... tried this. I added some molasses. It wasba bit too strong for my taste. So am trying again with just the sugar because i dont have dark sugar. Will edit later and try this taste. 1st one came out wonderful no problem. Just patience in rolling those into balls. Advice: for the dough add some starch on hand and add some on surface before you put the dough on anything to make the balls. It was easier to form that way. Will also try rolling it long and cut. Easier to do. The dough had stuck on my knife so it was more patience to take piece by piece. It was worth it. Happy to find this recipe❤
I ate the Pearls and syrup by it self and it was ok, but after leaving it in the fridge for two hours and have it with milk, oh my God, it was Soo good, more addicting than chocolate milk.
I only recommend the freezing method . Place your peals on a tray and leave it dry on top of your table for 2~3 hours. Then freeze it and transfer to a freezer bag or freezer tupperware. This will last for few months if done properly. I tried using a food saver in freezing and it lasted a year.Thank you very much for watching my video.

@LINDA ADRIANO i would recommend it, boba usually are soaked in a brown sugar syrup, but if you want to use ur boba in a green tea or something you could just mix them w honey or sugar! I love brown sugar boba milk tea which requires the brown sugar syrup!
Hey. I actually tried them before and after the syrup. The syrup cooking makes it firm and gives it a chew. Tho i did not make the syrup like so. I added just a tbsp of brown sugar. And then the boba from the cold water. And gave it a boil until the syrup got sticky. Thats it.

I’m assuming I undercooked mine. I stuck them in to boil, the water turned brown and they turned to a consistency that resembled frog eggs. I had to trash the batch. 😭
its because you only add the balls when the water boils. First time i made it i added the balls whikst the water was warm and it all broke apart and stuck to eachother
The brown sugar makes it taste better but you can add white sugar instead (I’ve never tried it with white sugar so idk how it tastes but you can give it a try)

And I didn't bother rolling them into balls, I tried a couple and it seemed like it would take a pretty long time, so I chopped the snakes in small cubes. Doesn't change anything, you just probably can't fit them through a straw.
However, they are tasty, firm and chewy, not slimy, and pretty pleasant to eat.
I saw some recipes for potato starch noodles, I'd guess the texture is pretty simmilar.

when you have formed them in a dough you can store it in a plastic wrap or a plastic bag....
but i recommend you to keep it for only 5 days or else it will mold

You can use any sugar you want! Granulated sugar works, but you can add in a pinch of cocoa powder for a better taste
If you want to store them, keep the balls in an air right container ( store BEFORE boiling!)

Ok... tried this. I added some molasses. It wasba bit too strong for my taste. So am trying again with just the sugar because i dont have dark sugar. Will edit later and try this taste. 1st one came out wonderful no problem. Just patience in rolling those into balls. Advice: for the dough add some starch on hand and add some on surface before you put the dough on anything to make the balls. It was easier to form that way. Will also try rolling it long and cut. Easier to do. The dough had stuck on my knife so it was more patience to take piece by piece. It was worth it. Happy to find this recipe❤

I ate the Pearls and syrup by it self and it was ok, but after leaving it in the fridge for two hours and have it with milk, oh my God, it was Soo good, more addicting than chocolate milk.

I only recommend the freezing method . Place your peals on a tray and leave it dry on top of your table for 2~3 hours. Then freeze it and transfer to a freezer bag or freezer tupperware. This will last for few months if done properly. I tried using a food saver in freezing and it lasted a year.Thank you very much for watching my video.

@LINDA ADRIANO i would recommend it, boba usually are soaked in a brown sugar syrup, but if you want to use ur boba in a green tea or something you could just mix them w honey or sugar! I love brown sugar boba milk tea which requires the brown sugar syrup!
Hey. I actually tried them before and after the syrup. The syrup cooking makes it firm and gives it a chew. Tho i did not make the syrup like so. I added just a tbsp of brown sugar. And then the boba from the cold water. And gave it a boil until the syrup got sticky. Thats it.

Are the pearl get hard after put in to the fridge? I did it with tapioca and rice flour and the pearl is harder after I removed from refrigerator.

You can store the pearls in the refrigerator for days , you can also freeze the pearls in a box or ziplock for months. Thank you.

I’m assuming I undercooked mine. I stuck them in to boil, the water turned brown and they turned to a consistency that resembled frog eggs. I had to trash the batch. 😭

You are supposed to let it sit and boil with a cover on it not stir it

its because you only add the balls when the water boils. First time i made it i added the balls whikst the water was warm and it all broke apart and stuck to eachother
