Just made this cake and it turned out perfect! I live in high altitude and had to reduce both the baking soda and baking powder to 1/2 Tsp each. If you don’t your cake will sink at high altitude. Also turned around and made another one dairy free. Dairy free butter and unsweetened coconut milk+ lemon juice were the perfect substitutes! Both cakes turned out perfectly moist and delicious! Thank you chef for the fantastic recipe! It truly was delicious!

If you put foil on top of your cake pans in the oven ...they will come out really soft and moist.
