4 things to change, onions before ginger garlic paste, tomatoes before potatoes and capsicum, capsicum before potatoes, and lastly, add Tamarind juice when using fenugreek.
Even for me 1st time it was bitter. That is because of 2 tbsp til, to make it eatable I had to add malai to it but still little bitterness was there. 2nd time I reduced the amount of til. And it was good.
I made this last night for dinner. Even fussy eaters at my house loved it. Yummy recipe. I added peas too. Came out really well!

I am not a fan of capsicum 🫑 but made this and it turned out so tasty just scaled down to half the ingredients!!My family loved it too!

Why do you keep stirring the cooking spoon in air simply after mixing the gravy. Looks really irritating.
