- BREAKFAST TOAST FOR THE WIN! If you haven't noticed, avocado toast has been sweeping local cafe's and breakfast restaurants for quite sometime now and I thought it'd be nice to sprinkle a bit of variety into the mix! Plus, I got to make homemade ricotta!!! It's the most satisfying thing EVER! Anyways, hopefully you guys enjoy the video and make sure to send me some more breakfast toast ideas!

INGREDIENTS:
Egg Spread:
3-4 soft boiled eggs
1tbsp Chopped herbs, preferably parsley, chervil, and tarragon
1tbsp chopped capers
1 tbsp chopped red onion
1 tsp dijon mustard
salt and pepper to taste
Cashew Pesto:
1/4 cup olive oil
1 tbsp chopped rosemary, oregano, and thyme
2 tbsp chopped roasted cashews
1 tsp sliced lemon zest
1 chopped garlic clove
salt and pepper to taste
Ricotta:
1/2 gallon milk
5 tbsp lemon juice
1 tsp salt
Blackberry Compote:
1 cup blackberries
2 tbsp brandy
4 tbsp brown sugar

This vid inspired me to creat my own avocado toast! lighty butterd toast with a seasoned avocado mix, topped with seared seasoned roma tomato, scrambled egg whites with sauteed asparagus, finished with a pinch of salt and pepper with fresh grated parmesan cheese... was amazing thanks Byron!

Technically, that's quark, rather than ricotta, as it contains both casein and whey protein. It would be ricotta if you first curdled the milk using rennet as in traditional cheesemaking (which drops out just the casein), filtered out the resulting curds, and then used the heat and lemons on the whey to produce more curds, which when filtered out make true ricotta.

I'm obviously forgetting something but what is the difference between making ricotta and buttermilk? I didn't know ricotta was so simple to make.
Ayesha Irfan buttermilk is a fermentation process where as ricotta is a curding process
ByronTalbott Okay but I literally made buttermilk the other day by adding lemon juice to milk so I was fascinated here. I think you gotta heat the milk to make ricotta but not for buttermilk maybe?
I think that ricotta it's more lemon juice than buttermilk
Ayesha Irfan when you add an acid (lemon juice or vinegar) to milk it curdles (white clumpy bits). When you add heat to acidic milk it clumps (curdles) a lot. The clumpy bits that rise up is the cheese. You don't heat up buttermilk, that's the main difference.

These look delicious! I love a good toast for a mid morning snack. Lately I do a homemade lime hummus topped wth sliced hard boiled eggs. Sprinkled with cracked pepper and coarse sea salt. Yum!

In Russia we call it cottage cheese, grandmothers cook it with adding Kefir to milk instead of lemon :)
