this guy just substituted a wok and spatula for a damn cast iron and spoon LOL dude is a beast
....not that hard...cast iron will hold alot of heat which is actually a side by side European version of a wok.
Woks hold fuck all heat. You need to keep them on super high flame or everything just boils lol.

I think it is actually harder to use a cast iron. Wok is just humongous and easy to toss stuff around without dropping. Catches more flame too
Cast iron to cook through the shell vs wok to just cook the shell. Smart chef and he understands the difference.
Shocked the lobster didn't overcook. The claws were already par boiled. They were then deep fried and then sauteed at high heat. Hung's a technician at this so I'll take his word for it.

Hung Hyunh is such a chef rockstar. I could watch him cook all day long. He seems too busy really cooking but I'd love to watch him on his own show or as a regular on Top Chef, etc.

this is cantonese style lobster... u do deep fry the lobster before sauteeing to seal in the flavor of the lobster in the shell. the fact that he uses sake is probably a personal touch to the flavoring of the lobster; he cooked it fine

That last thing he add, lobster roe butter, is what makes it super luxurious and different from the traditional cantonese lobster in north america!

Wow, cooking is such an art, such a simple art yet so magnificent and chemically complex. Tradition and taste and visual showmanship all in one. The feeding of humanity is such a serious task. I am always in awe of devout and learned Chefs. God's work and the toil of man all in one.

Hieu actually I'm a Vietnamese American and I have the same accent as him. It's a very faint Vietnamese accent and I can hear it only because I share that accent. So in a good way, his English is very fluent. Also, I feel a bit of a connection to him because of our ethnicity and I'd feel super stoked if I can cook at his level.

whatever or whoever the chef is, he is supposed to wear a cap or hair net and he is not supposed to even use a watch while cooking, that really shows the passion and mindfulness while cooking.

aghhh tried it added baking powder & beer to the batter for carbon dioxide and the bubbles so it was more crisp and omg the beer surprised the heck out of me so beautifully perfec!!!!!!

It's fried to seal in the flavor (supposedly). It's called "passing through method." Crispiness/crunchiness is not meant to be a defining part of the dish. That said, beer battered lobster sounds delicious

Up until I saw your question it peaked my curiosity as I may have thought on the back of his Top Chef win, with exposure (feature in Food & Wine magazine, Food & Wine festival in Colorado, the prize money (tho don't know how much it was the season he won), he might open his own restaurant. I found out he's the Executive Chef at Catch, "NYC's Coolest Restaurant". I am sure he is compensated handsomely for his role there and he certainly seem like he's enjoying himself. Very good sign.

I can't tell you how amazing that smells.
Best lobster I ever had was chopped up and wok fried in XO sauce. At first glance I thought WTF??? But man, oh man it's good and the dipping sauce they gave me was fantastic for seafood dipping, it was Chinese sweet red vinegar. Hard to find, has to be the sweet type, but it's hugely more healthy for us than dipping in melted butter since lobster is already a rich cholesterol containing food. Perfect for dipping crab and fish too. The chopping offers more meat from a given size of lobster, so easy to pick free from the shell fragments. But it is a real shock the first time an American is served lobster this way. Trust me, try it!

Being a Top Chef fan myself, tho haven't yet watched the Season 1 or 2(?) he won, but I would guess, being an experienced chef in his own right prior to his appearance, that I wouldn't be surprised that he now owns his own restaurant. Tho I don't know at what level he was when he appeared on Top Chef (sous chef or Executive Chef) his win catapulted him into Top Chef history . The money he won may have freed him to open his own restaurant. I'll check, since my curiosity has been peaked now.
