I Made a Mayonnaise out of The Building Blocks of Life

  • There's a surprising overlap between the molecules that we find delicious and the molecules out of which life emerged. Understanding the link between them and why we can taste them provides insight to help us to cook more delicious food!
    Mayonnaise recipe: These are the final amounts of each ingredient added to the mayonnaise.
    2 egg yolks
    25 g katsuoboshi in a broth, reduced to 40 ml (~ 200 mg inosinate)
    2 g salt
    12 g sugar
    8 g MSG
    1.5 g citric acid
    ~350 g oil
    Blend all the ingredients apart from the oil. Once mixed, slowly add the oil in a thin stream until a thick creamy texture is achieved.
    I think a better result would have been if I had use pure IMP instead of katsuoboshi, as there is only around 200 mg of IMP in 25 g katsubushi, and the best mixture is 1:1.
