Beautiful! I remember as a kid my Mom would make skirt steaks; I think they were sold in "pinwheel" shape. I don't see that on the shelf much anymore.....at least where I live. Very tasty and a good buy, too.

This looks good! Mama Papa joe, usually people make pinwheels with flank steaks as well - with the way you cut it, it looks very thick. How do you make it not tough? whenever i cook flank or skirt and cut it that thick, it ends up being very tough!
Dude...... that is inspiring! Each slice could be the meat for sliders with Hawaiian bread ( or dinner rolls, whatever bread you like ) or sliced, and overlapped on a hogie/baguette with some sauce for a steak sandwich.
This was not a graded cut Derrick, so it had a slight chew to it. The white streaks of fat that looks like marbling is mainly on the surface. It was very flavorful but next time I will source a choice or higher cut.
How long you cook them is determined by a few things. 1. How thick they are. 2. Level of doneness you like. (Rare, med rare etc) 3. Fiire temp. You're going to be successful if you are able to check the temps of the wheels as they cook, then remove them just before they reach your finish temp.

I'm sure a lot of videos are just fine where they scare me, because at home, nice and calm, less accidents. I work as a butcher and wear protection just so I can be recklessly fast. Can't wait to see more videos, you think smoked cream cheese, spinach and green onions would be a good filler? Maybe some Wsauce drizzled on top

That would makeca great filler keeping in mind that cream cheese can get pretty runny when heated. I like the idea!
