Edge Retention Test! - Ganzo G727M 440C vs Ontario Rat 1 AUS-8 Steel (part-2)

    Part 2- Ganzo G727 440C, V edge with 19.5° per side angle, 1500 grit diamond stone, stropped with 4 micron cubic boron nitride emulsion.
    We picked up some new cutting material, some 1/2in thick sisal rope, that should prove to be very hard on knife edges as well as easier to manage a measured amount of cutting. (similar to jdavis882's old cutting tests) We have before and after looks at the edges under microscopic magnification and put each knife to the test of cutting 8' sections of sisal rope into 1in sections.
    This is not really a test of which knife is better, nor is this all that scientific but it should give us a good idea of each steel performs when subjected to roughly the same test with roughly the same edge geometry. This will also be Frankie and I's first test of the Ganzo 440C steel which should have decent edge retention and at least in that sense outperform the AUS-8 steel.
    ***Spoiler Notes***
    In terms of edge retention, the Ganzo 440C performed superior and held a respectable edge after the same cut tests. I believe to maintain an edge like this would be much easier with just simple stropping to smooth over microscopic irregularities. The AUS8 steel with its rolling and deformation cannot be repaired with a simple strop and would need a resharpen more often. This goes along with the relative ease the Rat had to sharpen, it was a quick job to get it shaving sharp. Not as much with the Ganzo. Still, I would rather spend a little longer in a sharpening session and hold that edge for longer.
    All things considered, we both prefer the Ganzo G727 (aka Rat Fink)

    Thanks for the video. This is the first REAL cut test I've seen with a Ganzo. I bought the G729. It's awesome. My Griptilan is now a safe queen. For an EDC knife the Ganzo rocks !

    No surprise the 440c held up better and goes to show that Ganzo's are amazing value for money. I'm happy with the result as I have a Rat Fink in green on it's way from Gear Best 👍 Don't tell the wife but I also have a G734 coming with it , well it would of been wrong not too 😉.
    You guys should have thousands of subs, you're channel rock's 👊👍

    I totally enjoy the in-depth testing and info provided on the Ganzo 440c. I recently acquired one, and was thinking the exact same thing about their retention, since I own a Rat 1 also and know how it performs. Keep up the content you two!

      I have that knife it's great... Axis lock is a little too tight trying to work it in. If not I'll talk it apart and work the springs a little.

    At last, the scientific proof is there.... Great job Bird & Frankie. Thanks for that. The magnified edge after the test really surprised me. I expected it to be better then the Rat but such a nice clean edge after all that abresive cutting.... Wow!

    440C is an amazing steel, I spent hours reading Jay Fishers site and he makes alot of 440C knifes and has a wealth of info about 440C, Its difficult to work with but it really is a superior steel, especially for corrosion resistance.

      I wouldnt call 440c as superior for its corrosion resistance... Its rusting pretty fast, way faster than for example Sandvik used in morakniv knifes

      440c is ok corrosion resistance but less than good kitchen steel. I wipe my 440c after any mess.

      and my ganzo I have that same blade but mine is.... 17° on both sides 34° inclusive if I'm right. I finished it with a 3000 grit stone then went to my 0.25 diamond spray

    This is a good test series, but I'd love to see more precision in how you measure the tests. The number of cuts differed a lot between the RAT-1 and the G727M when the paper was tested. I'm a big fan of the channel!

      we appreciate that! lol it is tough to do a true scientific test when it comes to this stuff. as far as the paper goes, the number of cuts doesn't matter because we are simply trying to see if the edge retained it's ability to slice.

    This is the first actual testing I have seen of a ganzo vs name brand. I own both these knives in the video and while I can’t judge the Rat-1 edge retention because I don’t use it much, the steel on the Ganzo has surprised me. It is actually my everyday work carry knife. I use it hard and was expecting to have to replace it in a year or so like most cheaper knives but it has held up. In fact, I like it more than the Rat-1 and think it’s a better knife in every way.

      I'm thinking a little of two things: the Ganzo steel held up a little better than we expected and perhaps the Rat steel deformed quicker than expected.

    Rat 1 knives blades are now upgraded to D2 steel. for sale on some knife shops not yet on Amazon.

    Hey guys. I posted to you 5 years ago that I had the Ganzo G727M in black. It was great but I no longer have it.
    All my knives now are of way better blade steels except one.
    I bought a CRKT M16-04S with AUS 8 blade steel. The knife is great but the blade steel is garbage.

    I have each of these knives and like them both. Both perform well in everyday use. I favor the RAT1 slightly because the longer handle fits my XL paws better. I have been on a Ganzo buying binge of late however.

      No surprise. My experience says that, if it's proper heat treated, the 440 C steel is really good, has nothing to envy to VG-10 or 154CM and the AUS 8 A has always been a crap one. My doubt was if Chinese would get a good heat treatment paying attention to the procedure and not only to a cheap price by saving time.

    I am so excited by the results you have. I am wondering, do you have one of the RAT's that has D2 steel, that is an old classic semi premium tool steel for knives. I would like to see what would happen with that or some other steel. With the amounts of cuts you are doing it is a somewhat scientific test - the results do mean something.

    All knives will vary ,2 identical knives same steel ,heat treated on different batches will vary in edge retention. A great steel with poor heat treat will be worse than a cheap steel with a good heat treat looks like you got a keeper

    First knife was dragged sideways many time on the wood which affecting the edge s lot. So test is not very good. But it seems that 440C is better anyway.

    If you use the knife to scrape the cut piece of rope off the cutting board, then the edge will roll over. That seems to be what happened to the AUS8 RAT.

      I don't agree the edge should roll over from scraping across wood. It's a much larger force on the edge pressing down into the abrasive rope strands

      Wow that is a great looking blade almost looks like a ZT. I cant believe the price though, thats what really blows me away on those Ganzo knives. Do you have any idea how they are able to legally make alot of their knives pretty much replica's of other "famous" knives. You would think the big companies would wave their patents but ive looked it up and heard of no such activity unless i missed it. when i found Ganzo's that was the first though that crossed my mind and the second was the quality of knife you get for the next to nothing you pay for them!

      Stop, this test was fair enough to make a decision, not to mention I have many and long term experience with both brands, and their steel in real life use. I am a knife snob with alot of premium knives and am impressed with ganzos stuff, they make great beaters and gift knives. I have gifted away all my aus 8 rats (o ly have the D2 versions now, but still have 450c ganzos.

It is almost broken in to my liking, just playing with it for a week has gotten in almost to the point where it just flies in and out... Super smooth now- was yours shaving sharp out of the box? Mine was (I tested it)

      +TheGreatWhodini baliyo: sorta meh tbh. The tttt continues to be awesome, checked the edge and it will shave although not super easily. Frankie says technically since the deadline is today for VR that entrants have until midnight. Drawing sunday morning now...

    Why clean the Ganzo in each probe, but the Ontario never was cleaner? The test there is not at equal conditions. Sorry, but bad test. Thank you.
