    Below are the steps to make this delicious recipe.

    Ingredient:
    (for 2 persons)
    Salmon rounds - 2 pieces
    Eggplant - 2 mediums
    Zucchini - 2 mediums
    Olive oil - 4 tbsp
    ½ lemon peel
    Ground black pepper
    Salt
    For the sauce:
    Lemon - 1 large
    Fresh thyme (leaves) - 5 twigs
    Olive oil - 70ml
    Honey - 1 teaspoon
    Ground black pepper
    Salt
    Instructions:
    Grease the salmon slices with olive oil. Season with a little salt and freshly ground black pepper. Turn the washers on the other side and repeat.
    Cut the vegetables into lengths into the desired thickness. Add a little olive oil and sprinkle with salt and pepper. Mix the vegetables to season them evenly.
    Arrange the salmon slices and vegetables on the grill.
    Meanwhile, prepare the dressing. Drain the juice from a lemon. Add fresh thyme leaves, olive oil and a tablespoon of honey. Season with salt and pepper and mix.
    Turn the salmon and vegetables on the other side and keep them grilled for another 5-6 minutes or until browned.
    Arrange the salmon and vegetables on a wooden plate. Cover with dressing and grated lemon peel before serving.
