      Omg I know who makes the best croquembouche! He's an Australian chef called Adriano Zumbo! He has a series on Netflix called "zumbos just desserts" you should make his!

    I think the most legendary Croquembouche is by Adriano Zumbo. Highly recommend checking that dude anyway if you haven't already. He's a living legend.

      I would love to visit Australia some day. Unfortunately so far my only "contact" with Australia is through tv shows like Masterchef Australia and Big Brother Australia (which are btw the best of their kind when compared to any other country).

    It's known as the Great British Baking Show in the US, which airs on PBS. The term "Bake-Off" is trademarked by Pillsbury in the US, so they have to change the name of the show when it airs here.

      Me three! Buuut I was told it's to guard against temperature fluctuations when mixing to keep the dough at a constant temp, as metal starts out quite cold (shocking the dough), then can get very hot

      I agree 100% and Honestly it's not that hard unless you try and do fancy flavors or give yourself an unrealistic time frame.
      I made one with 160 individual profitore rolls and it took me a day and half. I could have done it in a day but I didn't want the stress

    I've tried eclairs twice. The first time okay but the second time was a complete disaster. Think i will have to try this with my son.

      Use a mixer when adding the eggs it makes it come together way faster. We make these all the time and it helps speed up the process also you don't have to put the flour on a tray first.

    I'll admit I started to laugh when you sifted the flour onto the pad and not paper🤣🤣. Paul Hollywood always says to read the recipe through, but once again in real Barry Lewis fashion, you kept it real, which is why I keep watching your video's. Thank you for this, I haven't made chocolate eclairs is so many years that I think I'm going to purchase fresh cream just to make them. Thanks again for keeping it real. Xxxx

    Look into Adriano Zumbo for the croquembouche. He's an Aussie pastry/dessert legend. He's usually on Aussie Masterchef making the contestants do hard dessert challenges & the first ever season on Aussie Masterchef he did the croquembouche for the contestants to remake & made his career skyrocket even more.
    He has his own stores around the country & has done a few cooking shows.

    i like how the hardest part of this is simply the dough of the pastry itself, makes you wonder if you could do it more simply by substituting, but i guess then it wouldn't be an eclair so to speak...
    ALSO WE DIDN'T GET TO HEAR ABOUT YOUR BRITISH BAKE OFF STORY! i was curious...

    Turned out great, Barry! Love seeing you try recipes that aren’t in your typical comfort zone. Looks like this one paid off nicely! Baking makes me nervous because of how exact you mostly need to be with the directions and ingredients.

    For the Corqeunbush I would do Martha stewarts. Ans as far as other recipes. Do Juial Childs Beff Burboniong, or maybe one of Frannie Cradock's recipes.

    This is original Recipe pl Ingredients:
    ● Dough recipe:
    80ml of milk
    60ml of water
    7 tbsp. of soft unsalted butter
    2 eggs
    5 tbsp. of all-purpose flour
    3 tbsp. of corn starch
    A pinch of salt
    1 tbsp. of sugar
    Bake in a preheated oven at 350F for about 15 minutes, then 325F for another 15 minutes
    ◇◆◇◆◇◆◇◆◇ ◇◆◇◆◇◆◇◆◇
    ● Optional vanilla custard cream filling:
    2 egg yolks
    250ml of milk
    ½ package of vanilla
    3 tbsp. of sugar
    2 tbsp. of corn starch
    2 tbsp. of soft unsalted butter
    ʕっ•ᴥ•ʔっ Additional detail for making vanilla custard cream:
    ☆.。2 yolks + 3 tbsp. of sugar, mix it up until the sugar dissolves, then add 2 tbsp. of corn starch into mixing well until you don’t see the flour.(leave on the side for now)
    ☆.。250ml of milk + 2 tbsp. of soft unsalted butter. Heat it up until the butter has melted completely.
    ☆.。Then pour all the mixture of milk and butter into the mix of egg yolk. Add gradually, and then mix it well.
    ☆.。Last transfers it back into the pan to cook for a little bit, then add ½ of the package of vanilla. Stir well until it’s thickened, then we can have a vanilla custard cream for our Éclairs.

    That's not chocolate eclairs. Chocolate eclairs have chocolate in it... If you fill them with whipped cream, it's "choux à la crème"...

    Hey Barry, I think you've mistaken silicone baking paper with non-stick baking paper when sieving the flour on. The idea is that its easier to pour the flour into the pan and it won't stick to the baking paper like yours did! I hope this helps. :)

    I tried to do a macaron and the first one had feet (little) but feet but they where under baked the littlest underbaked ever but they where still yummy then I cooked some yesterday for a party and I think I over mixed :( cuz the grew out a little sideways and they where just a little brown lol but I’m still gonna eat them I made like 20 of the things and my family ain’t gonna know but me lol 🤫 🤫 🤫

    Adriano Zumbo makes a really good croquembouche. He usually adds a twist to it making it his own style,​ but they are all amazing and you should really check him out.

    on the eclair front, maybe getting one of those "turkey stuffer" sized syringe, filling it with filling, and fill the eclair the normal way, instead of a pastry bag, and not slitting the side?

    Had a go at making these and they were quite flat didn't rise really so had to put two together to make one. I will have another go at the weekend. I think I may not of used a piping nozzle that was big enough possibly.

    Another tasty recipe were they made a cake it was 3 layers of cheesecake and each one was covered in a brownie a red velvet brownie and a chocolate chip cookie then stacked and frosted in a creamcheese frosting.

    Adriano Zumbo is the king of the croquembouche. You need to do one of his recipes.

    Use a ballon whisk and not a spatula. It's much easier to mix then.

    I remember when I first made Choux pastry, the smell was terrible and thought I did it wrong, but apparently I was told this was normal. 🙁
    I will never forget that smell, I can't even describe it as it was that bad.
    However I was pleased when they were cooked and had cream and chocolate added turned out delicious. 🤩👍
