Please try another eye round experiment where you cut steaks lengthwise from the roast and then slice them against the grain like a skirt steak. Very interested to see how this would pair with other techniques (dry age, pineapple, etc.) to make good $1 steaks!
I tried this. I covered the steaks with extra virgin olive oil, butter, sea salt, onion powder, and garlic powder. In the oven at 200 degrees for 40 minutes, then seasoned with salt and pepper, and seared each side for a minute on the grill. They were awesome.
That's because the other two were cooked only on the charcoal. Meaning in order to hit the right temp in the centre they had to overcook the steak and create grey bands. The third was essentially sous vide and then charcoal crust. But of course to avoid overcooking the centre had to be finished sooner but thus left a much juicier steak. 🎉 If they could have sous vide comparison to the deep fry in butter, that would be the way to prove which is better.
OMG I'm going to have to make that dipping sause. I LOVE Papa John's but closet one is an hour away 😢. Thank you @gugafoods for sharing this experiment!

Fun fact: The garlic sauce is half water and half fat, and the binding agent they use kinda sucks for anything higher than room temp which is why sometimes you get a soup instead of a sauce :)

hi guga try it on A5 wag yu steak and all expensive steak and dried age using that papa johns sauce hehe
Fun fact: The garlic sauce is half water and half fat, and the binding agent they use kinda sucks for anything higher than room temp which is why sometimes you get a soup instead of a sauce :)
