Yo, one note about that lactose. Most hard cheeses (majority regular cheeses you buy in stores) has had their lactose content removed in the process of making the cheese! I'm lactose intolerant, but can eat pretty much all cheeses- even fresh cheese in smaller amounts that still has (a bit more) lactose in em, like mozzarella and feta etc Good luck on the pizzabstinence my man!

i feel you. its the absolute worse when the dough is undercooked. Here in Mexico have the same problem. I have to tell them to burn it but they still dont do it and what I do is when it gets to me I put it on a flat top and cook it a little more.

And yes, you let the dough proof in the fridge for like 3 days or so to get that sourdough flavor.

One thing I found to help along with my family, is you need a pizza stone, and some people even say a pizza steel, stone absorbs less heat, and steel absorbs even more, in commercial ovens for pizza places, they use stones because if they use steel, it just gets way too hot. You want to let the stone, or steel, sit in the oven for what my family used to do at least an hour but I hear multiple sometimes, it get's a nice crust that really does genuinely look good and crispy, and is good and crispy, but it still had that homemade flavor, and I don't know why. It was just a little step closer to pizza place style. I hear people don't even use steels, they just use cast iron pans and pop it in the oven, with the pizza inside, and it also works just fine, but don't take my word for it, with the internet you can probably see a way shorter and simplified version of what I said that conveys more information. Good luck if you ever try this, but I do highly recommend it the next time you're making pizza.
For the delivery apps, I don't know if it works the same in Korea, but in America, the requests are typically just for the driver/delivery person and the restaurant never sees it.

Their oven is broken that’s why the bottom isn’t cooked. My dad is a baker and he has the second level oven be broken on the bottom. He sometimes bakes croissants with soggy undercooked bottoms
I couldn't cut out Coke for a month for sure. I drink it everyday!!! I don't really eat pizza but I could go a month without it. I would have thrown that pizza back in the oven to cook that crust. That looked totally undercooked.
Its crazy how underdone that pizza was. I can only assume it was cooked on a shelf with a few other pizzas on different shelves in the same oven which stopped the heat circulating underneath it properly. Happens in my oven at home if I cook two pizzas. The pizza at the bottom gets cooked more, and the one above it basically just gets broiled. Exactly what you're seeing here. Also if the lower pizza has vegetables on it they steam up the oven and stop the crust charring and going crispy. I guess you'd have to somehow figure out if res truants are using convection ovens or proper pizza ovens to avoid this fully in the future but idk how you'd do that
