  • The Bacon bread got my mind all up in my Hungarian heritage and reminded me of so many different recipes that we used to eat when Mommom and Poppop were around. I decided to revisit some of them. I have share some in the past like chicken paprikash, kifli cookies and the most recent Hungarian bacon bread. This fits right in with those and was a frequent sight on our table when I was a child. This creamy Hungarian cucumber salad with sour cream is a light and refreshing side dish for anytime but is very welcome during the hot summer months when cucumbers are plentiful and the days are long. #Homemade #Hungarian #Recipe
    In Hungarian this is known as Uborkasalata. It can be made a variety of ways but the two most popular are with or without sour cream. The former is more like a pickle when it is done but the latter is a masterful work of deliciousness. The sour cream adds something amazing to this salad. There are a couple tricks to get this just right.
    First you need to use a cucumber that is not too seedy. So a regular garden cucumber is not going to do, unless you take the seeds out first. I like to use either Persian or English cucumbers to avoid having to seed them. Next is to slice these super thin. I have an antique harp slicer from my Nanny and I still use it all the time. You can adjust the thickness of the slice. If you have a mandoline, this would be the time to get that out. The thinner the slices of cucumber the better.
    The biggest tip for this salad is the salting. You cannot skip this part. The salt is minimal and most of it will be discarded with the liquid, so don't worry about it being too salty. You want to toss the cucumber and a thinly sliced onion together and then toss those with a couple teaspoons of Kosher salt. If you are using regular table salt or fine salt of any kind, please only use on teaspoon. Otherwise it will be too salty. Toss these together very well and then cover and set aside for 10 to 15 minutes to allow the water to be drawn out of the veggies.
    Meanwhile you can mix up your dressing. There are a couple ways to do this. You can mix sugar, vinegar, pepper, and garlic together with 1 cup of water and then add your vegetables and allow them to sit for an hour before serving. This is the "pickle" version of this salad. Delicious, yes, but not as delicious as the creamy version.
    To make the creamy version, add 1 cup of sour cream to a bowl with 2 tablespoons of white vinegar and 1 tablespoon of sugar along with garlic powder (or you can use fresh minced if you prefer) and black pepper. Whisk well and that is your dressing. If you don't like sweet and tangy, leave out both the vinegar and the sugar. I love it both ways and grew up with both ways.
    When the dressing is ready and the vegetables are wilted and there is about a cup of water in the bottom of the bowl, it is time to squeeze. By handfuls, squeeze the excess water out of the cucumber and onion mixture, then add the vegetables to the bowl with the dressing. Discard the leftover liquid.
    Blend the salad together very well and add fresh herbs. I added 2 tablespoons each of fresh flat leaf parsley, chives and dill. Stir all this in and place into a serving dish.
    This salad is ready to eat right away but is much better if allowed to sit in the refrigerator for at least a couple hours and is amazing the next day. You enjoy this when you like it.

      Noreen's Kitchen I made these tonight and added the leftovers to some cooked small potatoes, carrots and radishes. Added chopped boiled egg for a mashed potato salad for tomorrow’s lunch.

    I JUST MADE THIS FROM AN SICILIAN VERSION LEMON INSTEAD OF VINEGAR and you are right,so refreshing. I love summer time cucumbers right out of our garden. I plan on making some cucumber mist spray too for keeping the body feeling and smelling fresh! THANX NOREEN,YOU DID YOUR GRANDMA PROUD!

    Childhood food memories is my Grammie Dube's thousand pound cake. Little story on how my Grammie's peanut butter fudge is referred to as her thousand pound cake. My Mom used to make a chocolate cake with a peanut butter frosting. She only made it at birthdays and when very special guests, like my Grammie, would come over. So one day, I came home from school I walked in and could smell the peanut butter. I got so excited my Mom made us cake! I went over to counter and took the lid off the cake pan and lifted it up. It weighted a thousand pounds, or so it seemed to my 7 year old self. I was like, "Whoa! This cake weighs a thousand pounds!!!!" My Mom and Grammie were in dinning room and over heard me and both laughed. Grammie comes over and asks if I want some fudge. I said, "No....but I would like a slice of the thousand pound cake. Make sure its a corner slice with more of that yummy peanut butter frosting." Grammie laughed, and cuts up a piece of fudge for me. Purely heavenly, ALL peanut butter fudge. Since then, Grammie's fudge has been referred to as her thousand pound cake. :)

    We have two versions in my family. My dad’s family makes it with the vinegar and sugar. On Mom’s side, they just salted them and squeezed juice out of the cucumbers and let them sit before putting on the sour cream. We don’t make it often in the summer, but we always have to have both kinds on the table for Thanksgiving and Christmas.

    Couldn;t believe it when I saw your mandolin. First time I ever saw another one. I use mine constantly (inherited from my mother) and it never seems to need sharpening. It is so convenient to use and easy to clean. I will certainly try your salad. Keep up the good work.

    Hi Noreen! This salad of yours is so close to our raita- made with cucumber, onion, hung curd with the dash of roasted cumin powder, coriander-mint leaves seasoning with regular and black salt and little bit of sugar. This is the basic raita but you can always pep it up with pomegranate and crushed walnuts! It’s definitely summer special and simply amazing

    my great grandma made this for my dad often when he was a boy, she was german. my grandma, dad's mom, made it too, but she didn't always add the sour cream... i was just looking for her recipe the other day but couldn't find it... i'm sure her measurements were close to these... its so good!! thanks for posting, gonna make my dad a happy man tomorrow!

    My mother made a similar salad. But, instead of the sour cream and vinegar, she used Green Goddess dressing. Another old favorite of mine was something from an series of recipes in an old cook book called Susan's Skillet Potato Salad, Yum.

    I make this with the cucs, red onions, small diced drained pickled beets, and sunflower seeds, and sometimes I add crumbled bacon to it. Every time at the end of the meal the bowl is empty, and people are looking for more. So simple, cheap, and refreshing, and it screams summertime, picnics, and get-togethers. Guess what will be on the menu this week?!

    My Gram always made layered salad for special events... chopped iceberg on the bottom, layers of thawed peas, water chestnuts, crispy bacon, green onion, chopped eggs, sweet & salty mayo dressing, chopped tomatoes. It looks impressive in a glass bowl and feeds a crowd as a satisfying side dish

    My Oma was Hungarian, she used similar recipe, but never made anything without at least a pinch of paprika, either for taste or simply for the rich color. :-)

      My grandmother was born in Ungaria. She used lots of paprika in lots of recipes. She my have put it on top of this salad. I just do not remember. I was 10 when we moved cross country. So never spent much time with her after that.

    I didn't know the salad was Hungarian. My Scottish Mom and Grandmother always made this salad when I was a child in the 1950's. Always a favourite in my family and I still love making it because it is so refreshing.

      Lots of cultures have a similar salad. Greeks have Tzaziki, Swedes have one almost identical to this, The French, the Germans and now I learn the Scotts. My family was Hungarian and it is an iconic salad.

    I grew up eating something similar from my mom. We never would add sugar, but in the right months would add small sections of tomato. I bet the garlic powder goes well with that, too!

      I do not use paprika in mine. Neither did my Hungarian grandmother. You should use what you like in yours.

    Cucumber salad is also one of my favorites!!!! One salad from my childhood that I used to hate, but now love is kidney bean salad. It’s made with dill pickles, sweet pickled, kidney beans, onion, olives, and mayo. We always had it during family gatherings!

    My late cousin used to make Hungarian cukes. I don't have her recipe, but this sounds just like it. I'm going to make some as soon as my new fridge arrives (old one DIED).

    No paprika? My mother was Hungarian and she used paprika in almost everything. Cream chicken with dumplings was my favorite dish.
    She would fry the chicken, usually wings, in a bit of oil with onions. When it was done , she'd add a healthy dose of paprika. and let it fry for a minute or two and then add 2 or 3 cups of tempered sour cream (if you add it cold you get lumps). She'd thin the sauce with some water until it was nice and creamy. The dumplings were flour and eggs (I think it was 1 egg per cup of flour) and enough water to make a stick dough. She would then cut table spoon size dumpling into a pot of boiling water. The dumpling float when they are done.
    The dumplings and the sauce were my favorite meal.

    It looks so yummy. I remember the first shrimp salad I ate was with cucmber and sour creame or yogurt I exactly remember. I could not find it in google. Can you please help me?

    My family would make this only using Duke's Mayo rather than sour cream and cider vinegar over the clear. This looks yummy I will definitely try it later like this, thanks for sharing!

    I make a similar recipe from a friends Mom. German Cucumber Dill salad. It uses cream instead of sour cream, dill, thin cucumbers, thin onions, a little white vinegar and salt & pepper. It always goes over big.

    I was born and grow up in Hungary and I like this salad. but I have to say it is even better if you peal the cucumber if you prefer to have it with out the sour cream

    Yum! My Grams made some kind of Jell-O salad for every Sunday dinner. My fav was lime Jell-O whipped with cream cheese which gave it the foamy layer on top and then she added bits of chopped celery and shredded carrots that fell to the bottom. So good. Thanks for the look back in time and we will be having your salad tomorrow fresh from the garden !!

    The same salad is also popular in Estonia - my mother used to make it but without onions and more dill.
