    I've made your strawberry mousse cake and it was divine. Can't wait to make this one too. You deserve so many more subscribers
    Do you have any tips for preventing the mousse from sticking to the acetate when you remove it? I refrigerate for a long time (usually 12+ hours) but it still sticks and takes chunks out of the mousse. Thank you for your amazing recipes

      Thanks for the kind words! Glad you were happy with the strawberry mousse cake!
      I removed the acetate right after taking the cake out of the fridge. I dont recommend heating the sides with a warm cloth - Ive tried which ended up taking more chunks off. I'm not sure why that happens to be honest. Remove the acetate as slowly as possible, bending the sheet all the way back. You can run a hot knife along the sides of the cake (preferably on a cake turntable for ease, though can be done without one) to smoothen the edges. Hope this helps!

    When assembling a cake, do I put the mousse batter together after keeping it refrigerated?
    The dough is creamier when assembled than when it was first made.

      After making the mousse, the cake should be assembled right away. Dont put the mousse in the fridge until you have assembled the cake layers, mango chunks and mousse inside your cake ring.
      "The dough is creamier when assembled than when it was first made." - Do you mean the mousse mixture thickens while the cake is being assembled? This is normal. If the mousse becomes too thick to handle, mix with a whisk until it's smooth again before spreading into the cake ring.

    How do I prevent the mousse making the cake wet, the mousse basically get mixed with the cake in my case. Thanks!

      Hello! Sorry to hear you're having issues - I've actually never had this problem before. What's the consistency of your mousse, is it very runny? Did it turn grainy? Was your sponge cake cooked all the way through?
