A good recipe that last my family for 3 days. You can take some of that onion, the peanut butter, two chicken breast. Cut it up. Fry the chicken in a little of your oil. Add the onions. A little water the peanut butter and make a sauce. Put your carrots with it and pour on top of your rice! It’s delicious! My husband is from Senegal and they know how to make some dishes that last or can feed ten to more people on a very low budget!

Cooking for one can be hard. If possible, make regular recipes and freeze them in portions... that way you can cook less often, and have variety. Cook Just 2 to 3 times per week and rotate out the frozen left overs.

Since I rarely go to Target I always end up buying stuff I don't normally buy making my shopping trip way more expensive than it should be. But there are reasonably priced groceries as long as you do not fall victim to impulse shopping. Last time I was at Target this lady was losing her mind and was blocking the aisle with her basket at one end and her husbands basket on the other end--not allowing people down the aisles. She took the 6-feet-apart thing to a whole other level.

This is what we call cheese on toast in the UK, and is typically more popular than a grilled cheese sandwich. We toast one side, toast the other (very slightly, not to brown it however, but prevents it going soggy when the cheese melts) then sprinkle cheese and add a few drops of Worcestershire sauce. I usually add butter once toasted, to the corners and a thin layer on top. It’s great.

I like to see hauls that include some staples. Most videos out there will include using staples, but "assume" you already have it and don't include it in the budgeting. Eventually those staples need replaced and have to be included in the budget, so a replacement staple should be included in some way in the budget... flour one week, oil the next, spices and sugars the next week after that, etc. It adds up and counts.

I make homemade oatmeal with brown sugar bananas. The bananas, a tablespoon or two of brown sugar, a pat of butter. Slice banana, place in microwave safe bowl, sprinkle brown sugar and a dash of cinnamon on top, add a pat of butter or margarine. Microwave till the brown sugar caramelizes and the butter fully melts. Prepare oatmeal as directed, I used instant oatmeal, then add a splash of fresh or condensed milk, and pour the banana mixture over the oatmeal. You could also add a few raisins or dried cranberries, and if you have it, some chopped walnuts or pecans, or peanuts. VERY GOOD!🤤🙂

I Would have traded one of the bread for flour & yeast and made bread, and other items with the flour. And traded one green bean for broccoli or mixed vegetables. With the extra money I would have gotten potatoes
Ways to use the items differently:
Oatmeal- oat pancakes, make oat milk
    Beans- refried beans, bean burgers
    Rice- rice pudding
Bananas- "nice" cream (blended frozen bananas into icecream)
Carrot- smooth carrot soup with bread made into croutons
Pasta- blended the one of the tomatoes into a sauce, put over half of the pasta, make bread crumbs, and bake. Then make a peanut sauce, vegetables, and pasta for different dish another night.

Street taco tortillas are small but very cheap and if you get the white corn type they are very cheap. The leftover broth from the carnitas can be used to season rice.

I make a pasta dish with black beans diced tomatoes and garlic and onion and a bit of oil if needed. Other variations with those items could have been bean/veg burgers. Oat pancakes, chilli, rice pudding for breakfast. Pb oat bars ( mix pb and brown sugar ( honey works too, heat in the microwave for a min) add in enough oats to get a cookie dough consistency form into balls or spread in a lined pan. I'd probably have reduced the bread and added in eggs and flour. Great video 👍

    Great video!
One of my favourite budget meals is fried rice. I just use any leftover rice (or pre-plan and precook rice the day or morning before). I saute onion in a little olive oil, then I remove it from the pan/wok. Then, I scramble anywhere from 2-6 eggs (whatever I have to spare), re-add the onion and add the rice. I will then add any leftover chunks of meat if I have some, plus whatever veg I have kicking around. It always gets a hefty scoop of frozen peas at minimum. I've often added diced carrots and peppers. Other good veg include green beans and tiny pieces of broccoli, but you can really make it your own. At the end, I add soy sauce and a pinch of ginger. You do this to taste. I love this dish because it's a one pan/wok meal for starters, and it is a complete meal as long as you're able to get some egg and some veg in it.

Great finding your newest videos! Thought you might like this old recipe from the Joy of Cooking which is an excellent budget dish. Very versatile; you can choose which beans and onions you use depending on what is on sale. Kidney Bean Casserole:
Heat 1-2 TB vegetable oil in a large skillet over medium heat. Add 1 cup chopped onion and cook for about 10 minutes. Add 2 cloves finely chopped garlic and cook until vegetables are tender, 2 to 5 minutes longer. Add 2 tsp (or more) chili powder and cook for another minute or so, to allow the spice to mix with the oil and vegetables.
Add 4 cups cooked kidney beans, one 28 oz can whole tomatoes (drained and coarsely chopped), 3/4 tsp salt (less if you’re using canned beans) and 1/2 tsp black pepper.
Cook for a few minutes until nice and bubbly.
Place half of the bean mixture in a 2-qt casserole. Sprinkle with 1/3 cup grated cheddar cheese. Layer in the rest of the bean mixture, and top with another 1/3 cup grated cheddar.
Bake at 350, uncovered, until the cheese is melted and starting to brown, about 30 minutes.
