Pineapple Pie | Polynesian style

  • This dessert is a favourite of mine growing up in the islands. My grandma was the one who would always make pineapple pies and it was always a pleasure to indulge in the sweetness of this dessert, with of course a cup of tea to sip it all down. Fast Forward time and I am now able to make the so called pineapple pie, but cleaning up afterwards is more of a trouble, but definitely worth it. Hope you all enjoyed! Malo
    Ingredients:
    CRUST
    2 cups of flour
    2 1/2 teaspoon of baking powder
    1/2 cup butter
    1/2 cup of milk
    3/4 cup sugar
    3 egg yolk
    CUSTARD FILLING
    1/2 cup of custard
    2 1/2 cup of milk
    1 can crushed pineapple
    1/2 cup of sugar
    MERINGUE TOPPING
    3 egg whites
    1 teaspoon white vinegar
    2 teaspoon vanilla extract
    1/4 cup of sugar
    Top it off with slices of peaches and peanuts [optional]

    I remembered living in NZ with my auntie and she taught me to make pineapple pies and this was the recipe of the crust as well as filling. Needless to say when I left her house, I never made it again,so this brings those memories back. We used baked meringue. With a few slaps you learn pretty quick how to make things.

    My cousins were all born and raised in New Zealand and all of them know how to make this pie. And they gave me the recipe, but its harder for me to follow the written recipe. Im so glad I found your video now cause thats exactly how they make theirs too. Thanks so much for this video it makes it a lot easier for me to follow it step by step. Thanks again.       Lol I was just saying this is diffrent to pacific Samoan recipie. My grandpa was a master baker, his pineapple pies were the best. Represented Samoa hard ❤❤

    You only use 3/4 cup of milk but your recipe says 1/2 cup of milk. Which one 3/4 or 1/2.

    Hello, can you confirm the following please:
    1. For the crust, is it 3/4 cup of milk or 1/2 cup milk?
    2. salted or unsalted butter?
    3. Do I remove the pineapple can juice/syrup in the custard or drain it?
    4. is it 205 degrees or 180 degrees (i saw your reply in one of the comments)
    Apologies in advance, this will be the first time for me making a pai fala and also new at baking.

      1. 1/2 cup milk
      2. I used salted, but you can use unsalted
      3. 180 degree celcius

    Question why don't you roll the base out so it's a uniform size/shape? Does it make any difference?

    My aunty used to make the best pineapple pie Samoan style IMO.
    She passed away last year 😢
    Now Im going to try and make one..meringue topping without those peaches etc.

    Hey just wanted to let you know I made this twice and today on Christmas Eve, I was having the worst trouble when it came to making the custard!! I realised what it was..I was following the written recipe and it differs to the amount in the video..lol thanks for the recipe again just thought id let you know.

    Thanks for sharing your variation of this recipe. I know there are different ways of creating this dish. I use water instead of water for the custard so that it's more jelly-like consistency rather than custard and use whipped cream topped with passionfruit pulp and peaches for the topping. Nevertheless I very muched enjoyed this video. Malo aupito!

    OMG...that looks delish..always love this but never try making it...is this the same dessert dish that was all the rage in the 80's at every Polynesian event???.I remember a friend who use to make something like this but for some reason she would always cut out the top layer of the cooked pie before pouring on the custard n pineapple filling...never asked why coz it was always delicious after she put everything together😋...

      Its fine if your crust came out puffy, but if you're not satisfied just use 1 1/2 tsp of baking powder

    Can someone please tell me what I'm doing wrong? I'm following all instructions BUT my base keeps rising and losing it's shape 😣😣😣

      Try poking a fork on the dough before putting it in the oven or putting less of the baking powder. The base doesn't have to be shaped perfectly. Let me know how it goes.

    what temperature was the oven set to to bake the crust and to bake the rest of the custard and meringue at the end?

      The oven temperature was at 180℃, to bake the crust and meringue. The custard at first was cooked at medium heat, once it starts boiling turn it down low and add a bit of milk if it is too thick. Hope that helps 👍🏽

    If you poke holes into your crust before it goes in the oven the crust won’t shrink

    No way is that pie lasting overnight in the fridge. Its not even gonna make it to the fridge 😂 ETA: this makes pineapple pie so simple. Thanks! Still tweaking the pastry. But this is good in a rush.
