Loved your review on FaT Hd. I was thinking between this and Fat Hd. Fat hd has less battery cost and maybe about the same tourge (given motors on the defenders are both 80NM). Fat hd easier to replace tires, hover chain suffers more.
What is the controler, should be able to run 45A to get full peak power for both motors. If gives only 30A you get 1500W what you can achieve with two 500W?? Peak 750W???
This is design is for 2 bat, should be tested with 2 bateries, with one bat at full peak power current 40+A on single bat, with 2 bat current 20+A what dramatically reduces voltage drops in cabling and internally so you get even bigger torque, speed, power on motors. Voltage drop Ix R, power drop loss I x I xR. So half current 1/4 of lossess in power.

i have a Thule 9002 trunk rack with a 72lbs capacity but the Defender is ~84lbs. do you think i'll be fine ?
How do the dual batteries work? Can you switch to using either one or both?
Whichever battery you have connected (1 ,2, 1+2), the bike will drain it evenly.
