Marrow and Ginger Jam - A Nice and Simple Recipe

- This surprised me! Easy to make, quick to set with an almost pineapple taste!
MARROW & GINGER JAM
INGREDIENTS
5 unwaxed lemons
2kg marrow , peeled and cut into 1cm pieces
2kg sugar (or 2kg jam sugar with added pectin - leave out the pectin below!)
2 sachets of pectin
80-100g root ginger, peeled and grated
METHOD
Pare the zest from the lemons with a peeler, then juice them.
Chop the parings.
Tie the shells and pips into a muslin bag.
Put the marrow into a preserving pan with 4TBSP of the lemon juice and about 50ml of water
Cook on a medium heat, stirring often, until the pieces are turning translucent and soft.
Mix the sugar and pectin.
Stir in the sugar & pectin, the rest of the juice, the zest, the ginger, and the muslin bag.
Stir until the sugar dissolves.
Bring to the boil, then simmer until the marrow has softened completely and the jam has reached setting point.
Pot the jam into hot jars.
The flavour of the jam will mature a bit over the next few months, so better to leave it a while if you can resist it.

Hi Steve, your collection of cooking utensils much be as big as my toolkit 😉. I have never heard of cooking string before? It was a harsh reminder about the heat… I got scars from hot toffee. I like the two camera angle views 👍🏻

Do they need to be kept in a fridge
No, there is no need to keep it in the fridge. However, once opened you may want to just so it lasts a bit longer. Mine gets used up quickly LOL

oh gosh, I can just imagine how much pain your mom must have been in. Silly question, what is Marrow, is it what we call zucchini? that jam looks delish, will have to make some, well that is when you tell me what marrow is, lol
Yes, a marrow is a very overgrown zucchini and vice versa but with modern breeding zucchinis are grown to be small and marrows to be big. I think that sums it up.

Good looking jam Steve. I made courgette and ginger jam two years ago and that was delicious, no one would try it because they were put off by the courgette but it just absorbed all the sweet ginger taste and was gorgeous, it didn't set very well so I used it mainly in porridge and yoghurt for breakfast. Your poor mum with her fused finger, did it unfuse? Bless her, that must have been awful 😞
No, she had a crooked finger all her life (I can only imagine the pain - makes me cringe 😢)
Best way is to label the jar as something else like "Pineapple Jam" LOL. I've had to reheat a few jams in the past, even though they pass the setting test they are still a bit too loose for me.
