Costco steak is great however I wouldn't remove the fat cap as a former butcher. It comes out as a juicer steak if you cook the steak with some of the fat cap on it.
You might've figured it out by now, but here in Washington State at our local Costco, the Prime grade NY is $11.70/lb. Price may vary depending on your location, but nonetheless, it is a killer deal to get steak whole, trim it yourself, and slice it to your liking!
I wanna know about Costco's labeling ... USDA Prime steak. Is this USDA Choice Angus Prime or the actual USDA Prime that represents the 2-5% of beef sold as Prime? Anybody?

I probably wouldn’t use Costco knifes either. I’m carnivore so I was cringing when he cut all that good fat off.

I freeze them until they are just frozen and then transfer them to a sealing bag so it keeps its shape and back in the freezer until needed.
