i've always admired people who can travel solo and just explore without without laid out plans... traditionally, pinikpikan is whole chicken that's been beaten. they say the bruising/hemmorhage makes the chicken more savory. that's what most people say. then they char grill the chicken. and that part you showed on cam, it's chicken heart. there was once an animal cruelty issue due to this process of food preparation so i'm not sure if that's still how they do it nowadays.
In Farmers Daughter Kinuday means smoked meat.... kinuday Jen baha(smoked beef) kinuday Jen baboy(smoked pork)kinuday Jen manok(smoked chicken) there most popular food there is Pinuneg(blood sausage) Sungo guisado and the Ube cake..

It looks like native Philippines chicken which is why it is a bit black in color. Native chickens are usually tougher in texture because they are leaner and free range chickens and are healthier and more nutritious.

local here, you should have tried Soledad's Eatery since you stayed near Bonifacio street, its like a 100-200 meters walk away from where you stayed. only locals who grew up and raised in Baguio knows that its one of the best in terms of food.

Your pinikpikan was probably made with native chicken, the texture of the meat is totally different from the broiler chickens you buy from supermarkets. They give off a richer flavor in soup though.

Pinikpikan - is chicken BUT prepared differently. The “spank” the chicken with stick until it dies, so blood is almost intact instead of letting the the blood drain down before the chicken is cooked. The last part of the chicken that you were hesitant to ear was the heart and not what you thought ;)
Pinikpikan is different from dressed chicken that are soft and perfectly removed feathers, for this, they use broilers, it is usually grilled or torched after plucking the feathers for rich taste and aroma, boiled for 1hour~2hours(if it's a bit rubbery, the boiling time is not enough), added with etag(pork that was dried under the sun), and oh, the only seasoning used is salt😉

Pigar Pigar is an authentic food here in our city in Dagupan City, there's also a soup based beef which is Kaleskes you can try also. Baguio and Dagupan is 2 hours away of travel, there's a bus or van you can ride in Baguio to get here, but Pigarx2 and Kaleskes only served in Dagupan City at night. You can try Dyland's Pigarx2 it's near the Market it's one of the OG places that sells authentic Pigar Pigar and Kaleskes
