    Great info. But guys... Use a spoon to get them out, and lime is NOT that caustic whatsoever. We've water glassed and they were well preserved for 18+ months. We also have procured many a porous egg from our chickens... dirty eggs as well. You can wash them, dry them and recreate/reinforce the "bloom" by brushing on an organic cooking oil of your choice (i.e. vegetable oil, olive oil, avocado oil, etc...), coating the outer eggshell, then allowing it to dry first before adding the egg to your lime slurry. Works like a charm for us.

      I've stirred the solution with my bare hand. No issues and I normally have delicate, dry skin. I wonder if folks use the hardware store version of slaked lime maybe it's caustic? There is a range of alkalinity in various products. Soap is caustic, for example, but not terribly so.

    I just figured something out for freezing eggs I'm super excited about! If you've seen those baking tins made for pre-cut brownies, you can line the pan with parchment paper, dump in 18 scrambled eggs, put something like oil on the pre-cutting grid that goes in the pan, freeze, and you've got 18 individual egg servings! I was able to fit a whole dozen eggs into a fold-top sandwich bag!

      I'm sure it works just fine. Just the whole process wouldn't be great for how we go about our lives. It's just another perspective for people to think about.

      Yeah it works great,but if their chickens are laying thin shelled eggs,they should rather check into solving that before trying to water glass.

    I am from South Africa & have been water glassing my eggs from my organic free ranch chickens for over a year. Tested an egg from August 2022 & an egg from August 2023 (fresh). Fried them for my hubby & he found no difference in the taste. Just remember to wash thoroughly before using. We have so much load shedding of our electricity so will lose more eggs if the power goes off for a day or two. Two each his own which ever way suits your life style 💕🙏

      I'm in Gauteng I want to try water glassing next summer, are the egg good for all uses? I will mainly want them for cooking I can get slaked lime is that Ok to use ?

      @@Gabriel-xi9gh Gabriel I have just today baked banana loaf with eggs that I water glassed in 2022 and the bread is delicous. I have been using my eggs for fried eggs & scrabbled eggs & found them to be no different in taste. The main things is mine are my own free range chickens so I raid the nests everyday & therefore I have fresh eggs that go straight into the lime if clean. no washing eggs before they go into lime & a good washing of the lime off before using, Slaked lime from our co-op is what I use.

    I worked for the public school system for years in my county. This is EXACTLY how they get their eggs in. They are blended pasteurized frozen eggs in a big gallon bag. Thanks for sharing!

    I purchased silicon ice trays that hold 1 1/2 eggs in each cubicle, mix them up, pour them in and freeze. After frozen, pop them out and store the egg cubes in a large 1 gal ziplock bag. Using all those smaller ziplock bags is a huge waste and expense.

    I used this freeze method a couple years ago and found that puting the eggs in an ice cube tray instead of a bag worked great. I hate wasting the little bit you loose that sticks to the bag...so it pops nicely out of the tray then you pop the egg cubes into bags and as i recall, one cube=1 egg, so you just take out 1 cube for each egg in your recipe! Easy!
    Honestly, though, i would use multiple methods- you cant trust the grid- power outage can cause all your hard work in the freezer to be wasted. On the flip side, we live in the desert in AZ and we haul water (no water utility in our area), so 'rinse well' items are not so desirable either... As i recall the old saying goes "dont keep all your eggs in 1 basket"

    I have two eggs almost every day !! Love eggs . You are the cutest kid with that space between your teeth .
    I was so happy when I saw my nephew with the same thing ! Because of this you'll never get old, you'll always be adorable !

      Yes you can....we've never really needed to try and preserve them so this is the process we went through this year. If we ever need to preserve them again then we'll probably go with mineral oil honestly

      Is Mineral oil harmful in terms of penatrating the shell membrane and leaching into the white and yolk?

      @@CC-lv1ox I’ve been using mineral oil on our eggs for a few years, I can’t say whether any of it leaches into the whites, but it’s not harmful for consumption. It used to be used as a laxative before better products came along, but there’s no laxative effect that we’ve noted after all the eggs we’ve eaten 😉 you just have to make sure the eggs are at room temp, have been washed well, and dried before you apply the oil. I use nitrile gloves when I do this because I just don’t like the mess, but you don’t have to 👍🏻

    I froze eggs last year both whole and scrambled. I found the whole ones did wonderfully when poached.

    I oil my eggs which preserves them 6-12 months. I use whatever cooking oil is handy.
    I could not find the science on waterglassing eggs so opted for oiling them. Love it, easy peasy. Am eating eggs from early July and it is just like I collected them.

      @Juan Ocampo I put some oil in a bowl. Dip my fingers and apply to egg making sure I have got all of it covered in a thin layer. Then I put it into an egg carton and write date I did it on.

      @Juan Ocampo you CAN store them in a cool dark place, but putting them in the fridge is better. But yes, just make sure they are completely coated with the oil. Basically what it does is seal the egg and stops it from breathing and growing.

      I have been water glassing for a little over a year now and I have used my water glassed eggs at 6 months old, it may have been a bit older, I am not sure my eggs will ever get any older than 6-8 months before using…. I used silicone covered tongs to get my eggs out so as not to touch the lime water, I put them in a large enough bowl with cold running water so the eggs can be completely covered with water, I can make sure the eggs are good by checking to see if they sink or float, do not use any eggs that partially float or float. I have only had a few eggs that partially floated. With the running cold water it helps to rinse the loose lime off. I then take each egg and thoroughly rinse them under the running water, take a damp paper towel to just clean them a bit more I then just lay them on a towel to air dry. Water glassing has been a great way for me to preserve but like they said, it may not be for everyone. 😊 I also have dehydrated and frozen eggs. All are great ways to preserve your eggs.     I agree. I freezed mine in cupcake pan. Single with 1/8 teaspoon salt or sugar. Beat just a little to break the jokes. Works perfectly. I will be waiting on that cheesecake ya'll 🤣😂 Love the videos 💐💙🙏🇿🇦🇺🇲

    Using a spoon to put the eggs in/out the lime solution saves having to wear gloves.

      Freezing is handy for short-term if you want to spend money on bags have more bacteria and pay to run a large freezer but people waterglass becouse its the cheap easy more natural and trusted traditinal preservation method...so its realy just a matter of dedication to your type of homesteading and personal preference.

    This process may be too much trouble for you, some people may not want to spend 5 to 7 dollars a dozen for eggs. I think much of the high prices of food is simply price gouging by the food producers. They are charging high prices because they can.

      That is definitely one cause. Another is government payouts to destroy crops which can include the culling of herds and flocks. The third cause is poor training of new over the road truckers that got fast tracked through a condensed CDL program getting in accidents that destroy entire semi loads of eggs which could be a million eggs easily or even semi trailers full of chickens being killed.

      Cost $8 minimum for a dozen eggs where I live most people sell eggs for $10 a dozen...so glad I have my own chickens

    Pickling lime is not that caustic to your skin when diluted as much as you need for glassing eggs. And even if it seeps in some, you are eating more pickling lime in an actual PICKLE than you will glassed eggs. It is a perfectly safe practice as long as you pick good quality eggs☺☺☺.

      We don't use pickling lime in pickles either. This process is just simply not worth it for our situation.

    This is good to consider. How we I would still water glass. I have things to use for avoiding touching the line, and I can’t just do scrambled for my recipes because a ton of my recipes require just the yolk or just the whites. But obviously if that’s not the case for others than freezing could be a much better option!

    I’ve glassed eggs forever, you don’t need to smell them. If there bad they will float it the water there in, Also I fry frozen eggs too, why could you not, and if you put your eggs in a muffin tin, you can store a pile in a bag not just 2 or three

    You can use tongs to take them out. Skin drying is not an issue.

    Curious. How often did your stomaches actually get "sick" from eating eggs you had waterglassed? I think a balance of both waterglassing and freezing would be a good investment of our eggs.

    We have been glassing eggs because I did egg freezing and don't like the taste at all. It made my recipes the wrong consistency. I much prefer the glassing.

      its ok...totally fine if it works for some people. Our purpose in this video was to provide some insight into some things that might be made a little more difficult by using glassed eggs and why it wouldn't work for our lives. In reality, we didn't like freezing the eggs either

    I did this last May followed your directions to a t eggs are good no smell but my problem is when I crack the egg the yolk comes out broken did this on all the eggs Are they still good to eat ?

      It has worked great with our fresh eggs. I have never tried it with store bought eggs.

    If all else fails I just make pickled eggs which means they are hard boiled still last forever if u pickle them with vinegar

    To get the air out of a zipper bag place in a sink full of water and slowly submerge as you seal it.

    Freezing is nice but if lose electricity and no generator you lose a lot of eggs.

    This process is no where near as hard as this video makes it seem. The freezing process is more time consuming on both ends of the process and you only end up with eggs that cannot be fried.

    Tried for the first time this year. All my yokes are runny. They taste fine, but seem watery. Is this normal with water glassing?

    Okay can't do fried eggs can't do this can't do that. Also I don't know where you guys are at. I see somebody saying they hope you aren't affected too much by the storms. I'm assuming you're in the Southeast where I am or at least somewhere close to where I am. When you have hurricanes come through a lot of times you lose power. If you don't have a generator on immediately say you're at work or whatever you lose power your freezer stops working everything in the freezer goes bad.

    I prefer fried eggs, scrambled is good too. Rarely bake food needing eggs. Using water glassed eggs sounds tedious. Freezing means broken eggs. Think i will just do with what i can or cannot get.

      Yes it can be a problem trying to preserve them for sure....we just had so many that we needed to try to preserve them for later or lose them

      I don't think it would work the same. I have heard of a lot of people just mineral oiling eggs. I have personally not tried that method but i'm very interested in it.

    The basic safety precaution when dealing with any sort of acidic or caustic solution is to always wear chemical resistant gloves... The irritation is called a chemical burn and the actual container of lime should tell you to handle with care and to use gloves when handling especially when wet.... Be smart, wear the proper PPE which includes gloves, eye protection, and breathing protection even when in a well ventilated area until mixing is complete.
    Water glass is useful for certain things but dehydration works for my needs

    I was under the impression that you only waterglass eggs you cant use because you have too many, not all your eggs, eggs will keep in the refrigerator for weeks. Just saying.

    That’s a lot of paranoia, it’s not difficult.
    I mix 50lb bags of lime at work without any gloves or anything and I’m just fine and Canada is way colder than your neighbourhood.
    You’ve blown this way out of proportion.

      I make breakfast for him every morning because I love him. We service each other because we love each other. Jason works a public job for eight hours a day and then comes home and does more work on the Homestead. He does several things to serve me as well.
