In this Video from the Cottage we show how we make delicious Rosella Jam at home, a skill which may be in vogue again with prices going up!
Getting back to basics can be fun and rewarding... it's just a change of mind!

ROSELLA JAM
4 Cups Rosellas
4 Cups Water
4 Cups Sugar
1 Packet Jam Set
Step 1. Remove the red fleshy calyx from the pods and place into separate bowls
Step 2. Wash both the calyx and the pods then drain
Step 3. Place the pods in a saucepan and just cover with water boil for approximately 20 minutes
Step 4. Remove from heat and strain the liquid off, reserve this liquid for use in the jam
Step 5. Place the calyx into a saucepan and using the reserved liquid from the pods just cover the calyx
Step 6. Bring to boil then simmer over heat until soft remove from heat and measure the volume.
Step 7. Return the calyx to the saucepan. Add an equal amount of sugar to the calyx (i.e. 1 cup of liquid with calyx to 1 cup of sugar)
Step 8. Add 1 tablespoon of lemon juice per cup of liquid
Step 9. Reheat the sugar, lemon and calyx mix add jam set (if needed) bring to boil then rapid simmer approx. 15 mins
Step 10. Remove from heat, cool slightly and then place into sterilised jars

Thanks, this is a very good video. I have just "discovered" the roselle plant and have seeds started. This will be my first year, and being an optimist, am looking for a jam recipe.... 🙂

Why did you dump the pectin liquid out, only to pour it right back in?
Great question, sorry we didn’t really explain this, but the reason to decant the liquid and put it back in is so we ensure we don’t put too much liquid in with the calyx’s as it would make a runny jam😊
