    This is the most colorful and fancy cake of the peruvian pastry. It is called Torta Helada and here is the ultimate recipe with all the details to prepare it properly.

    These are the Ingredients:
    Sponge cake:
    4 large eggs.
    120 grams of All purpose flour (1 cup approx.).
    90 grams of granulated sugar (1/2 cup approx.).
    Syrup:
    250 milimiters of water.
    100 grams of granulated sugar.
    Gelatin and Mousse (Charlotte)
    150 grams of Strawberry gelatin
    400 grams of Evaporated milk (1 can).
    50 grams of sugar ( 1/4 cup approx.)
    1 1/2 Tablespoon of unflavored gelatin. (15 grams)
    1/3 cup of water to hydrate Unflavored gelatin. (75 grams)
