I would steam the broccoli to lock in the vitamins and minerals, and then use the steamer water for sauce and add some more water for spaghetti. Great idea for new way to enjoy broccoli!

You can also throw a little spoon of water in the garlic and oil, and that will stop the garlic from burning, because as long as there is water in the oil it won't go above a certain temp -- maybe 212 degrees (depending on your elevation, of course)? And this is so much more complicated for me, because I have celiac disease, and the rest of my family does not. So I have to make two types of pasta. I cook the broccoli, then my pasta -- which takes quite a while, like 8 - 12 minutes, depending on the pasta -- then their pasta. But I have to use two skillets of broccoli, one for them and one for me. It's amazing how much more complicated it is to need to make two separate pastas. I actually made this dish up all on my own back in the early 1980s. I'm sure the Italians were doing it, but I didn't know that. I lived in NYC, and worked at nights, and came home in the wee hours. I would stop at the corner store and get broccoli, garlic, and pasta! Sometimes I did mushrooms instead. Couldn't go to the supermarket at that hour, and had one of those college-sized fridges that fit under the counter, so couldn't keep much food on hand at all. One thing I do differently is I use much, much, much more garlic! And it is delicious.

I enjoyed the video, well done. Personally, I would cook the broccoli in the pan with the EVOO, garlic, and a little water to steam it and help cook it. I would also peel the broccol and not waist the stem. Last but not least I'd finish cooking the pasta in broccoli for the last 4 minutes or so, so the pasta can absorb any flavors. Another thing I might do, at least to try it, would be to add the juice of half a lemon to give an interesting twist. Then I'd add fresh parmesan. Still, the way you cooked the dish looks delicious!
This s a great dish. I have changed it over the years. I sauté some onions & garlic in olive oil, then add the chopped(on the finer side because my family doesn't like chunks of broccoli) to a large pot and cover it with either chicken broth or water with some 'Better than Broth' and cook until the Broccoli is about half done. Then I add Penne or Ziti Pasta to the pot and let it cook together with the Broccoli until its al dente. You may have to add some water as the pasta absorbs the water in the pot. Then I add one can of Cream of Chicken Soup(don't hate it until you try it) to create a cream sauce. I serve it with Locatelli at the table. My family goes nuts for this version.
i've been making a way less healthy version of this by adding bunch of green onions, some toasted pine nuts, some cream, and chicken cooked in paprika/cayenne pepper marinade added on top. it's unbelievably good.

Ok. Try this. My grandmother was from Naples and this was a peasant soup her mother also made. Throw your garlic, broccoli and salt in the water and cook the broccoli until it's soft. The water should also have a slight green hue. Now add your spaghetti broken into 2 inch pieces and cook as usual. Add a few tablespoons of olive oil at the end and thin some Parmesan in the soup bowl. I love it both ways, but I am curious if it started a a peasant soup. All Italian peasant soup is water based and of course amazing.
Sounds great! The version you describe sounds like more of a soup. My Grandmother made a lot of those broken spaghetti peasant soup recipes. I always remember the cucuzza soup growing up. Often instead of the big cucuzza, she would use small zucchini just cubed. Reminds me, I need to make a video for that one.

I grew up eating this, but we always just called it pasta with garlic and oil and broccoli. Sometimes we'd use spinach. But this is exactly how we'd always make this. Cheap and filling.

I use frozen broccoli florets. Microwave it, poor off water, microwave a bit more. Cut the florets up smaller. Easy. I use left over coarsest cut up chicken. Lots of it. I make a white sauce using garlic powder, salt, pepper and anything else I want to flavor it. And of coarse the cooked spaghetti always el Dante. I use skimmed milk for the white sauce because that’s what I have on hand. You can’t tell. Some margarine or butter. Flour thickens it. Delicious. It’s a meal you don’t have to fuss with. Watching calories so that’s why lots of chicken and broccoli. It means less spaghetti and it won’t leave you feeling deprived.

A nice dash of heavy cream +fresh black pepper gives this dish a nice elevation
