RICE AND SHINE with this BEAUTIFUL golden Paella Recipe

    LAY HO LAY HO! This is one of those dishes that's perfect for a lazy one pan day or fit for a king and queen on those romantic date nights. Join me in this episode and learn how to make a delicious vegetarian / vegan paella recipe right at home!
    Ingredients:
    3 pieces garlic
    1 small red onion
    150g asparagus
    1/2 red bell pepper
    1 tomato
    2 tbsp olive oil
    1/2 cup canned chickpeas
    generous cup artichoke
    2 tsp sweet paprika
    pinch of salt
    1 1/2 cups veggie stock
    1 cup arborio rice
    generous pinch of saffron
    Directions:
    1. Finely chop the garlic and dice the red onion. Break off the woody parts of the asparagus and chop into bit sized pieces. Finely dice the red bell pepper and tomato
    2. Heat up a nonstick pan to medium heat. Add the olive oil followed by the red onions. Sauté for 2min
    3. Add the chickpeas and artichoke. Sauté for 2min. Add the garlic and asparagus. Sauté for another 1-2min
    4. Add the sweet paprika and give the pan a stir. Add the red bell pepper, salt, and tomatoes. Sauté for 1-2min
    5. Add the veggie stock and distribute the arborio rice throughout the pan. Add the saffron. Then, gently submerge the rice into the liquid and bring to a boil
    6. Cover and cook on medium low for 15min. Then, turn the heat off and let the rice steam for 10min
    7. Turn the heat to medium high and cook the rice uncovered for 4-5min. Squeeze over some fresh lemon juice and serve

      Hi man....I love your recipes and have incorporated several into my repertoire. Nevertheless, I would need to make an observation regarding this paella....Veggie Paella perse exists, and I love it. But there is just one issue that would need to be mentioned...Absolutely no one ever puts onion in a paella, as it deteriorates the rice to the point of making it mushy. It's the golden rule in Spain....

    I'm from Spain, and I can see the respect you showed to the recipe, looks gorgeous, a great vegan adaptation of an amazing dish. Things I would change or add: Instead of chick peas in spain we tend to use peas, give color and flavor. Also we don't normally use onion on the paella, it unbalances the water making the rice too soft and mushy and makes the caramelization on the bottom (socarrat) harder to achieve, the starting sofrito (which is normally onion and garlic on other dishes) would be the garlic till fragrant and then adding the diced tomato, some people add tomato paste, this also gives color. Green olives give an amazing taste. For those who can get it, the ideal rice is Bomba, but Arborio is a good substitute.

      Very helpful comments! I like to idea of adding peas for color. Will mentioned at the beginning that he sometimes uses plant-based sausage, and that sounds better than chickpeas (I'm not fond of their texture)

    I greatly appreciate the attention given to tradition and where you veer off - I think one of the amazing things about our modern world is that many of us can experience other foods from cultures we may never have been in direct contact with, but many creators forget to tip their hat to the original!     My family is from the Valencia region in Spain, and I lived there for a few years. This is a lovely recipe, and it was very respectful to the culture for you to say that the recipe is not authentic, but delicious nonetheless. Some suggestions, though: use bomba rice or any other Spanish paella rice instead of arborio. Arborio is usually used for Italian risotto, and releases a lot of starch. Bomba rice releases less starch and is great for socarrat - the yummy crusty rice you get at the bottom of the pan. Instead of chickpeas, use giant navy beans - not only they remit to the original ingredients, I think it also compliments the rice better.

    Great recipe and awesome videography. I swear I can smell this through the screen! Here's a little tip. Before turning off the heat to rest, heat the pan up to high for a minute, then turn it off. It will help you create that wonderful toasted rice on the bottom called 'socarrat' in Spain. That really makes a paella a paella! Cheers!

    Stunning paella! I'm so happy to see a Spanish dish on your channel! Although a bit different from the "original" recipe, it stills looks absolutely legit for me. In Spain most families have their own way of making paella and honestly outside Valencia (where it originally comes from and where they are really proud of their recipe) what is mostly made is what we jokingly call "rice with stuff", because it rarely resembles the original one. For example, no onions are used and instead of chickpeas a special kind of bean (called garrofó or garrofón) is used. But I love my onions in my paella and this version definitely looks amazing and the ingredients are no doubt good examples of what some families would use at home, great choices! I can literally imagine how this tastes like, you managed to make it look "familiar" and that is an amazing accomplishment! ¡Que aproveche! :D
    Fun fact: almost no one uses authentic saffron (besides really good restaurants and paella enthustiasts), because it's way too expensive! Instead, you can find at most supermarkets a "paella mix", which basically consists of food coloring with a little bit of salt and sometimes paprika in it :P

    Made this a few weeks ago and loved it, thanks a lot for this great recipe and for your clear and well shot instructions. Your videos a great!
    Just a tip for other viewers that might want to try this recipe: when I used the saffron, I placed it nicely in the middle, similar to the video. However, after it finished cooking, I noticed that only the middle part of the rice turned yellow, as the saffron was concentrated there. Next time I would try to mix the saffron a bit better in the rice so that the flavor and color disperses a bit more evenly.

    Made it tonight with stuffed "vegan crab" mushrooms to go with it and naan - all can be chopped up and ready to go/bake before company comes over. Excellent balance of flavors. You're right on the saffron, it's not paella without it.
