    Brrrr...is it cold in here? I feel really frosty and icy! Ok, ok, I know! That was really stupid, but it's late, I want something sweet really, really bad...sorry. Hey, Jillian, I made my turntable! I found an acrylic cake stand at a garage sale that has about a 5" solid acrylic base, it stands 4-5" off the table, and the top is 10" around. On that top, I mounted a lazy Susan (12" around) with a good amount of hot glue. I put little rubber circles on the bottom of the actual cake stand so that it stays firmly in place while my cake can turn very easily at whatever speed I desire! I love it! And, it all wipes clean with bo problems. Now...thank you so much for the tips! I love any help I can get from Jillian Butler! Love from Iowa, again.

    Hi Jilian - Thanks for the tips. It's almost Christmas time and I am planning on baking the Devil's food cake. Being a beginner it becomes complicated with which item to follow by what. By that I mean, should I bake the cake first and then make the ganache followed by the frosting? What would work best? It usually happens with me that while handling one part of the cake the other parts messes up coz of the temperature issues. Either it's left out long or not and so on....Could you please help? Thanks a lot for the tips and recipe...getting to know quite some stuff :) Thanks again!

      Hi Arima das, thanks for watching! My recommendation is to make the ganache the day before you make the cake because it needs at least 8 hours in a shallow pan to cool and set in the fridge. Then make the cake and cool it in the freezer while you make the frosting.
      OR
      You can make all of these pieces a few days ahead of when you need them so don’t feel pressure to make it on the day you serve. At the Cakery we use to make dozens at a time and store them in the freezer until we needed them and big vats of ganache and frosting too.

    Hi Jillian! Tried out your chocolate cake. It was awesome and well appreciated. Extremely moist and soft so much so that the crumbs can be mistaken for melted pieces of chocolate.😋 Thank you for this recipe. I didn't use the same frosting though. I'm going to do that the next time.

    Love the tips on how to keep the cake moist and to apply the icing. I always have issues with my cake being a bit too dry. I've heard that when you insert the pick a crumb should come out.

    Are you using ganache frosting to this cake ? How much ganache you use and how come it’s shining .please share us the exact measurement of chocolate and other ingredient to cover that big cake like what you’ve done in your video . Thank you for sharing it looks so perfect and yummy ❤️

      Hi Leslie, yes I use the ganache for the filling - approximately 7-8oz. (100g) per layer or more if you like a lot! Then I frost the cake with the fudge frosting which gives it the glossy finish.     i am just a beginer can i ask what is the best icing use for frosting is it butter? or whiped cream or just eggwhite and powder sugar

      Hi, apologies for the delayed response! I am a firm believer that butter is the best for icing. I have a motto "the more butter, the better!" BUT, it depends on what kind of cake you're making as well. So if you're making a vanilla cake or a chocolate cake, butter is definitely great. But if you're making a light chiffon cake or angel food cake its best to make a chantilly cream icing or something that's light and compliments your cake.

    Any suggestions for baking cakes in an electric Oven? I find that if it cooks until done in the center, the edges are overdone. Never had that problem in a gas oven.

      Hi Nicole, all of my cakes are made in electric ovens. Do you live in a high elevation? You may want to bring the heat down, if so.
      Also make sure that you have a small oven thermometer inside of your oven. Often the dial does not reflect what the real temperature is on the inside. Hope that helps! J

    Thanks for sharing your tips. I hope you can help me, I am abt to bake my son's bday cake and he wants a “hulk” cake. I am thinking of making green velvet cake with white chocolate cream cheese frosting, my questions is can I just use any red velvet cake recipe and just substitute red with green food coloring? Also, I live in a tropical country, no a/c in the kitchen, what tips can you give me since I will be using the said type of icing. Thanks! :)

      Are you just wondering about putting corn syrup in your icing to make it glossy and keep it from crusting? I don't think that there is an actual corn syrup frosting...

      Hi Kathy, thanks for the compliments. I have a confession to make. Back when I was in my early 20's, I couldn't bake a cookie to save my life! But I decided to give it a go and failed many recipes. But then one day it turned out great and just kept improving from there. Out of mistakes comes learning and confidence! Give it a go, I know you can do it!

      Hi Carolanne, apologies for the delayed response. The frosting is shiny because it's a "hot" icing. What I mean by that is when you make the icing, the chocolate is warm and the cocoa/water liqueur is also hot when you pour it into the creamed butter/sugar mixture.     How do you prevent the middle of a chocolate cake from sinking in?

      Hi Beige! Thanks for the compliments!
      I can offer three tips to prevent your chocolate cake from sinking in;
      1) Most important thing I can tell you is to NOT open your oven until the timer goes off - heat loss will destroy the last rise of your cake and nothing will get that back.
      2) When you press down with your finger (in the middle of cake) to check the cake's doneness, do it very lightly because if it's not fully baked then that will also deflate it like a balloon.
      and finally;
      3) The less batter in your tin, the quicker and easier it will be to bake - try splitting your batter between two pans!

    Thank you for sharing your tips and trics. I have a question. The bowl you have the icing in for crumbcoating, with me gets under some crumbs getting of the cake! But I see all bakers on you tube using the same icing for the end topping/coating? Don’t you use a clean bowl with clean icing?😅

      Hi Serena, thanks and that's a great question! It's all about the softness of your icing. The crumb coat should be done with icing that's a little warmer and thinner than when you use it for the final coat. Warm your icing slightly before whipping it with your mixer and flat beater. The icing should be like room temperature butter and glide into your cake crumbs without tearing it or collecting many crumbs along the way.
      If you're not able to avoid the crumb collection then save that crumby icing in a different bowl and use it next time you crumb a cake for the filling instead! No waste!

    To set the frosting we Keep in the fridge but the cake becomes hard . What is the solution

      Hi Sushma, Always bring the cake out at least 1-2 hours before you want to serve it. That gives it a chance to come back to room temperature and soften up nicely.

      Hi Nisha, if you think your icing is too hot and melty to ice your cake then put it in the fridge for 10 minutes then take it out, mix it around and try again. If it's still too hot then put it in for another 10 minutes. This is just so the icing doesn't get too cold and rip your cake to bits! Let me know how you go!

      Hi Omar, apologies for the delayed response. To make icing sugar at home you will need a blender or a good food processor. Take your granulated or caster sugar and put it in the blender/food processor. Blend it until it becomes powdery and the fine consistency you need it to be. It's not going to give you the finest icing sugar that you purchase in the stores but it's good enough when you're stuck in the middle of a recipe and need it quickly. Give it a shot and let me know how it turns out for you!
