Regarding the alcohol content, I haven't measured it yet as I don't have a wine hydrometer. Need to purchase one. So far I have been a bit old school, ie I make the wine but don't measure. The yeast is used to kick start fermentation. Wine is technically made from fermented fruit/grain where sugars are converted into acids, gases or alcohol
Jaggery may lend a strong taste and mask the flavour of the java plums. Secondly, without adding water you wont get the desired volume of wine right? It will be more like macerated fruit

Sorry to hear that. Please ensure that there is absolutely no moisture in the utensils used to prepare and jars/bottles used to store the wine. If you follow this precaution your wine should turn out good

Sugar is necessary for Yeast. Sugar is their food. For the ideal wine sugar % should be 24. It's a choice some like sweet wine some like dry wine. If you don't add sugar yeast won't survive.

Non reactive containers such as steel should be ok

Remove seeds first
Half the juice is lost while trying to remove the seeds. My method works best for me
