Loukoumades - Baking with Dimi

  • LOUKOUMADES (Greek Honey & Cinnamon Sweet Puffs)
    Loukoumades (Greek Honey Puffs)
    Ingredients:
    225g Plain Flour
    50g Corn Flour
    290ml Luke Warm Water 9g Dry Yeast (1 1/2 tbsp) 1 tbsp Honey
    1 tsp Salt
    1 tbs Ouzo (any brand)
    Garnish
    150g Honey
    1 tsp Cinnamon
    1/4 cups Roasted & Chopped Walnuts (optional)
    To Cook
    3 cups Rice Bran Oil
    Method
    1. To prepare the Loukoumades start by dissolving the yeast in the water. Then add the honey and give it a good stir. Cover with plastic wrap and allow to rise for about 5 minutes, until it starts bubbling.
    2. In a separate bowl add the flour, corn flour, salt and blend to combine. Add the yeast mixture and ouzo to the flour mixture. Whisk all the ingredients together, until the batter is smooth. Cover the bowl with plastic wrap and let the dough rise for about 30 minutes.
    3. Into a medium sized frying pan pour enough rice bran oil to deep fry the loukoumades. Heat the oil to high heat (175-180C). Test that the oil is hot enough by dipping in some of the dough, if it sizzles the oil is ready.
    4. Using an ice-cream scoop, fill half the scoop with the batter and carefully drop it into the oil and fry until golden. Repeat this procedure until the surface of the pan is
    comfortably filled.
    5. While being fried, use a slotted spoon to push the honey puffs into the oil and turn
    them around, until golden brown on all sides.
    6. When done place the Loukoumades on a plate, drizzle with honey and sprinkle with
    cinnamon and chopped walnuts. Enjoy!
