You should try barbacoa tacos. Literally similar but made with different spices and aromatics🇲🇽🔥btw no need to dip your taco in the consomé. Just drink and eat as you go to prevent any mess.

In my 40+ years, I discovered birria three years ago. It's a delicious mess lol! Some taquerias makes the consome so rich, it makes an excellent soup! Next time I get some, I want to fry up some tortilla strips and dice an avocado, oh that would be like The Ultimate Tortilla Soup!

Authentic Birria uses slow stewed goat meat and the goat meat makes the difference in taste! Birria is like the Mexican French dip and I like to cut the tacos into strips and dip it or just put it in the consomme and let it soak in the juice then eat it!
I prefer the birria w out the consume . The consume sometimes you don’t need it bc the whole point of “birria” is the type of meat you’re eating . Therefore it’s soft and shredded goat or whatever type of meat they use. And yes you do need the salsa w the tacos 🌮
Travel to 100 different Mexican cities and each will have their own way to make tacos. And that's just tacos! Food travel tours through Mexico would be a great idea.

Some of my personal faves are dorilocos/tostilocos/cheetolocos (basically any type of chips), Mangonada (mango ice cream cup), hot Cheetos with nacho cheese, Esquites preparados (corn in a cup topped with various ingredients like mayo, parmesan cheese, butter and your choice of extra toppings of smashed hot cheetos.), Agua Loca (Crazy cup of fresh juice with ice cream), and Pepino Loco (Crazy Cucumber Bowl with Chamoy and Mexican candy)
