    This is one of the best cooking videos I have ever seen. Very clear instructions. I wish you would make more videos using the electric canner.

    I also have the Carey canner, BUT I always make sure the 10 minute count down finishes before I put the regulater to pressure

      The nice thing about the Carey/Nesco smart canners is that they will not start the process until it is up to proper pressure. Thanks for watching!

    I asked "Santa" for the Nesco canner last Christmas and I guess I was a good girl because I got it. I haven't used it yet though. I do have a water bath canner and I have used that over the last few years but that limits what I am able to can to high acid foods and I really want to can vegetables instead of just freezing them. We picked up a couple pounds of green beans at our local farm today and I am so happy I found your video because now I am feeling more secure about using the canner and anxious to get my first batch done. Thank you for such clear instructions.

    Thank you for reiterating the need to check the jars and lids before using them. It’s so important. Recently I was canning carrots I harvested from my garden and had a half the jars not seal. Went to check why and half the lids were creased on the edges, and I didn’t notice before I put them in the pressure canner. These were brand new jars in a sealed case, and I used the lids and rings that came with them. Couldn’t return them, because it had been several months since purchase and they were used, of course. Very frustrating. If I had checked before using them, it would have saved me a lot of hassle.

      Onion soup mix
      1/2 c dried onion flakes
      3 T.beef bullion ground
      1/2 t. Onion powder
      1 T. Parsley flakes
      1/2 t. Garlic
      1/2 t. Paprika
      1/4 t. Pepper
      1/2 salt

    I believe the difference is that canning salt does not have anti-caking agents added the way most other salts do.

    Don’t set to airtight until the 10 min. Countdown goes to ‘E0’

    I just did my first batch…when I removed my jars I noticed there was only about 1/2 the water left? Is that ok? I did fill to inch of head space

    I am going to read book to you! when steam begins to exit the unit the machine will beep and will display E10 shift the top limiting valve to Air Tight. The E10 count down will continue down to E1 as the unit continues to build up internal pressure.
    the old manual was not very clear but the new manual has been corrected.

      I thought the NEW manual said to wait until the end of the E cycle before turning the limiting valve, and the OLD one said to turn it at E10. Because in traditional pressure canning, you’re supposed to let the unit vent for ten minutes BEFORE putting on the weight. The E10 is the venting process.

    First of all, great video. I followed the instructions and thought I had the correct results. Everything sealed, there was no siphoning. However, a friend told me that I should have used the green valve (for high elevation) but I'm in Pennsylvania (not high elevation). Now, I'm wondering if my jars are safe.

      If you live 1000 ft above sea level or more, then yes. 15 lbs of pressure. They are probably fine, but I would use them first just to stay on the safe side. FYI, if you simmer anything at least 10 minutes, it will kill all yuckies, including botulism. So if you are nervous about it, just do that.

    What happens if I can green beans and pushed the pressure canner button instead of the High button?

      Then you have pressure canned green beans. If they sealed, I would use them unfairly soon.

      Both are really hard to come by right now. I was searching for one for my sister a couple of weeks ago no and the only place I found 1 found 1 was on the Nesco site for a $179.

    Oh my gosh. Im so confused. Arent the beans too high? I thought everything had to have the inch headspace. I hope someone reads this. Im cutting beans now and just opened my new nesco this morning.

      Yes, one inch headspace is correct.

      They are too high. That is not 1 in headspace. But 1/2 to 1in both work

    Canning salt doesn't have any additives in it like iodine or free flowing additives. It has to be pure salt...Jo

      Regular salt won't hurt it but it will make the contents cloudy and unappealing looking, so it's not recommended.

    I notice you set your canner to airtight before the 10 minute steam exhaust was complete, is there a reason you dont have to wait 10 minutes? Its what I have been told and watching a lot of videos. Just want to make sure its ok either way.

      Both my Carey and Nesco directions say to let it count down to “0”, then when it beeps to flip the weight to “airtight”.

    We cannot find this type of pressure canner anywhere in Canada.....I tried it under Nesco and Carey but nothing.

      I bought mine at a rural king in Alabama but I think there in different states and they might ship

      I just ordered a second one they run 129.00 with tax etc. It was 141.00 rural king dothan Alabama website and I believe it is called a chard nesco electric canner

      Absolutely, yes you can. Any salt but ionized. The ionized makes the water murky looking. Thanks for watching!

      I don't think so. Unless there is a model I am not aware of, Ball doesn't make a pressure canner. Must be pressure canned. Thanks for watching!
