    I make so much of this stuff. I literally use a whole box of each chex. To mix it I assemble it all in a new -garbage bag- large food safe bag like a bucket liner, pour in the butter mix and tumble the bag to coat everything. Then I dump it into two disposable turkey sized deep roaster trays. I start the second tray after 30 minutes. When the first one is done I dump it out on a parchment lined counter. I season with a blend of Mrs. Butter, fine ground black pepper and powdered jalapeno and leave it to cool for 30 min then it goes back into the tray and the second tray goes onto the counter... The day we have people over we just put out the trays with a stack of solo cups. There's usually none left at the end of the day. Some of my favorite add ins are Snyders nibblers (the garlic ones are perfect for this) Nagaraya garlic cracker nuts, White cheddar or hot and spicy Cheez Its, and Kirkland Praline Pecans or honey roasted peanuts if you want a little sweet, spicy and salty effect.

      Garbage bags are not food safe

    • @SyBernot
      @SyBernot ปีที่แล้ว +6

      @@carolberres5528 You are correct, I should have caught that when I was typing it. If you want to omit the bag you can just use the turkey pans. Put one on top, clip the edges with a paper binder clip and gently roll to coat. The bags I use are essentially 5 gallon bucket liners, left over from a restaurant that went under, I have thousands of them, they are my garbage bags. If you have those they are food safe, you can get them in bulk at any restaurant supply or in smaller quantities (though at 3x the cost) on amazon. They are essential to have around if you do any sort of large meal prep.

    My three keys to great Chex Mix are: I use my big, deep roasting pan. You have to get the seasonings on every piece, so you need lots of room. Second, I ALWAYS use GARLIC bagel chips. Third, I let the mix cool on layers of paper towel. This helps with crunchiness. Merry Christmas!

    I make this all year round to sell at a farmers market, I make mine in a turkey foil roaster pan and it’s FULL, I use a box of Crispix, a box of all 3 chex mix, Rice Krispies, cherries, life cereal, cheddar cheese roll gold pretzels, and sometime goldfish crackers. My seasoning is: 1/3 cup Worcestershire sauce, about 1-2 tsp. Tabasco sauce, a tsp. Of each: celery salt, onion salt and garlic salt, 2 sticks of butter. I put all this in a saucepan until butter is melted and stirring constantly until starts to boil. Spoon over mixture, using a large spoon, a little at a time and stir after each addition until all seasoning and butter is mixed in. Bake in a 325 degree preheated oven for 1 hour, stirring every 15 minutes. Add a can of peanuts before the last 15 minutes and stir. After the 4th 15 min, remove from oven and stir, let cool overnight on counter. Bag up in the morning, seasonings will be better once cooled. If you like it spicier, add double seasonings and bake as above.

    This is exactly how I make my chex mix, except I use cashews and I usually add a bag of some type of chex mix or a snack mix that has the rye toast and pretzels a few cheese doodles etc. But the sauce is exactly what I use. I love the butter and whostershire sauce and garlic. Awww, my mouth is watering!! I actually do have a huge cookie sheet and I use it a lot. Might want to invest in
    one but I bake a lot of cookies especially during the holidays to share with my family and friends.

    I also use a large black and white speckled roasting pan to make mixing easier. Also double the sauce mix and make it in a 4 cup glass measuring cup, easy to melt butter in micro and mix in your spices with a small whisk. Lawrey garlic salt is a must, also onion powder. Have been making this over 40 years!

    I grew up calling it Party Mix. We use a family recipe from the the 60s. We use different recipe using vegetable oil, Worcestershire sauce, seasoned salt, garlic salt and boat loads more of cereal, pretzels, and mixed nuts. It makes a huge amount. We have always used a big roasting pan with a lid. You bake it for 2 hours stirring every 30 minutes. You leave the lid off while baking and put it on and shake vs stir (Bond style)!

    Great video, One of our favorite snacks as well. My life changed when I got a huge stainless steel bowl. Mix it in the bowl and bake in the same bowl. No escapees burning on the oven bottom! We use chex mix to clear out the small parts of snacks left in the pantry. Most anything you eat with soda or beer works well. Even saltine crackers are very usable if you add them last. (they will soak up more than their share if put in early)

    I make DOUBLE the recipe in a large roasting pan. I follow the original recipe and melt the butter in the roaster. I measure the ingredients into the top of the roaster because it is so big, it holds everything very well. Then, I add the spices, the Worcestershire sauce into the melted butter then add the dry ingredients and MIX. Same as you, I stir them every 15 minutes 4 times. OH SO YUMMY!

  • @IMJwhoRU

    Great video! I use a 13 quart stainless steel mixing bowl to mix and bake in. Mix everything in the bowl and put it in the oven. Then when I take it out of the oven to cool, I stir every 15 minutes for another hour. Of course, you can take some out to cool on a plate for immediate needs. 😁
    I think the chewiness is because of the water in the butter and the Worcestershire sauce. The final cooling step allows that to evaporate to make it crisp again. If it’s still chewy, you just need to bake it longer. I usually do 80 minutes of baking, stirring every 20 minutes.
    Worcestershire isn’t pronounced anything like it looks (from the original British English anyway). Start by thinking ‘rooster’ … then make that ‘roostah’ … then ‘woostah’ … then add the ‘sher’ … woo-stah-sher. 😁 I also like Trisha Yearwood’s saying from her father… whas-dis-here sauce (what’s-this-here)

    Love that you posted this! I agree the store bought mix doesn't even come close to homemade. My mother used to make this for us grown kids for Christmas, and her mother made it for us growing up. They called it Texas Trash. I never got their recipes; all I knew was butter and Worchester Sauce. Mom would put cashews and when she could find them the little garlic bagel chip rounds, if she couldn't find them she's would sometimes break up the larger chips. Every once in a while she'd put pecan pieces if she had pecans left over from another pecan snack she made that was my grandfather's recipe.

    Chex mix has been a family tradition for over 40 years. It is an all family affair. We make the basic and customize each family member. I double the ingredients and add pecans. Always use only Costco brand fancy nuts, so much additions. We even made a special batch for one that has severe allergies, gluten included. We even made our own Worcestershire sauce because she cant have the regular. We have become experts after 40 years! We don't bake I have the original microwave recipe. Literally, we make at least 40 lbs. A big hint - use turkey bags to pour ingredients into and add sauce and toss. Everything gets coated.

      I purchase a gallon of Lea and Perrins Worchester sauce per year and use it throughout the year. But, mostly used when I ultra soak (with lots of butter and lots of garlic and onion powders/Lawry salt in a primordial soup to flood the chex mix with). My chex mix turns out mostly BLACK after many stirs at 20 minute intervals at lower heat for about 2 to 2 1/2 hours. People beg me for a bag every holiday. I bag it and label it "ELF Nutrition". Use a turkey baster to apply MASS flavoring. I only add honey roasted cashews and dry roasted pistachios at the end of the LOOONG bake/drying cycle that do not have chex mix coating specifically added to them

    This is a really good variation.
    I've long been tinkering with variations on Chex Mix recipes and this one is almost the same as what I came up with. Peanuts instead of mixed nuts, pretzels, Cheezits, Cheerios. All the same. I do cut down some on Worcestershire sauce which can overpower it. Only real difference is I don't use Wheat Chex, which don't come out quite right, and I add a cup of raisins in the last 15 minutes (the full hour makes them bloat up).

    Let me drop something on you that may may have been considered before…. I made some becuase my sister made some for Christmas and it was pretty good I’ve made it a few times and I was just here eating some that I made around three days ago and it tastes better, has more flavor … as if it developed .. I recommend trying to age it a few days in a freezer back and your patience will be 100% rewarded

    I use the great value stick pretzels. The best. Onion powder, more garlic more than called for. Little seasoned salt. More butter than called for.

    I usually use a foil lasagna or roaster pan. I make it gluten free. Corn, rice, and honey Chex, gf pretzels, nuts. Mom made it every year with I Can’t Believe it’s not Butter. I tried butter the first year I made it and nobody liked it. 😆 back to mom’s recipe. Like Dave I also make extra sauce. It just wouldn’t be the holidays w/o Chex mix. ❤

    You can save a step on chex mix by adding crispix cereal. It's rice on one side, corn on the other for each piece of cereal and it's like a little pillow that holds in all the goodies.

    A great dish to cook the mix in is the large black with white speckles metal roasting pan with a dome lid. You bake it with lid off, but when it is time to stir or mix it, put the lid on and shake it. A lot easier than stirring a full pan or using two baking sheets.

    My batch uses way more of the dry ingredients, so my assessment of the recipe is that it uses too much fat and salt, and I use fresh garlic. Everybody loves the recipe I use, which was my mother’s, and those are the things they like compared to other mix: not as oily or salty.

    Using a 9x13 metal cake pan, a flat spatula and paprika instead of seasoning salt is my go to method. The flat spatula allows for lifting and sifting the cereal without crushing it!
    To make a sweet and salty version I use honey roasted peanuts! Have never used cheez-it crackers but do enjoy them as a stand alone snack.

    I too omit the wheat Chex and rice is my favorite. Evidently you didn’t have the necessary half sheet pan. I have never liked a deep dish because the shallower the better able to have that roasted and crunchier effect. I wish I had some right now and bacon grease in lieu of butter is essential.

    Substitute the Cheerios with Cap'n Crunch... I even have jalapenos and garlic in mine as well...
    It depends on the pretzels as well...I've had ones that are overly sweet and/or overly sour... The trick is finding the right pretzel...

    Great recipe that I cook every Christmas. The one change I make is to use Honey Nut Cheerios. It is the sweet with the salty and I love it! Also try parchment paper next time. All that yummy stuff on the bottom will stick to the cereal and not the pan. Parchment paper is awesome!

    My recipe comes from my mom who was making it in the 1950’s. She called it “Tiny Snacks”. It had everything you have but no Cheese It probably they were not around.

    • @NoDontLikeIt
      @NoDontLikeIt ปีที่แล้ว

      I LOVE the name “tiny snacks”-I’m gonna start calling it that. Btw, Cheezits have been sold in stores for over 100 years now. (I actually learned this fact yesterday. Lol. And was really surprised to find it out). When I told my mom that, she said she remembered them being kind of a seasonal item, so it sounds like they weren’t always readily available like they are now.

    I use a turkey roaster to make this! I use honey version of Chex, cheerios and Shreddies. I add peanuts and cashews, cheese its, and pretzels. A great sauce with oil, celery salt, onion and garlic powder, seasoning salt, Tabasco, chillie sauce, cayenne, worsteshire, oil. You can’t get Shreddies in the US…too bad. Anyone who eats my version is addicted instantly!
