For those who hand squeeze lemon: 1/5 of a lemon would be sufficient. Or squeeze into a cup and measure with a tea spoon. I hand squeezed 1/4 of a lemon and is too sour. But I'm putting my tangy caramel into my chocolate cookie batter anyways! Smells heavenly!

I just made this. I used Sprite instead of lemon juice. and instead of heavy cream, I used cream cheese!!! I made caramel squares! candy! It was so good!! Thank you!
I made it with 150ml sugar, 50ml water and 150ml table cream. Any volume as long as they're 3:1:3. And I measured all of them with one measuring cup. Just do them sequentially. It's really easy and no fuss at all. Success at my first try ever!
It's important to remember temperature when you're working with your ingredients. Your sugar is likely to be stored at room temperature but you cream may have been refrigerated. I think it's best that the cream is room temperature before you add it in or it may spoil the process. *I am not a candy maker* by any means.
Here in Hawaii I make wet caramel like this with a little fresh pineapple juice instead of lemon and condensed milk with a touch of sea salt. I use a Pyrex pot with a lid to help avoid crystals. This is the fastest method I know of. Right before the caramel is dark enough I remove from The heat and add the condensed milk .

If you're using butter, here's the measurements I used: About 2 table spoons is fine, although if you think its not thick enough you could add another table spoon or so. Also, make sure it's softened.

I like this recipe a lot better than one of the ones i previously used. A few months ago i was making caramel and once i finished making it i poured it in a bowl to let it cool. The caramel ended up going all over my fingers. I immediately rinsed it off. The only person home with me was my brother. And neither of us had anyway to go anywhere. So i had skin that was peeling off and burning. And i had to take a hammer and smash an ice block cause thats all we had. And then i found out your supposed to use water. So then i sat for 7 hours with my hand in water. And yes that may seem like an extreme. But the only time i left it out of water was to go to the grocery story when i finally had transportation. And even with pressure on it the whole time. I still managed to be screaming in the store. When i got home i put it back in water. and slept with my hand in water. when i woke up my skin looked awful. Currently im still healing. So just a warning. When the caramel is done being made. The after steps could be dangerous.
The key is to NOT STIR it will crystallize n stick to the side when water is added to sugar stir lentils to not hit the sides then leave it to boil when brown gently wave the pot to stir it once again . Dont wait to long cause it continues to brown even after off the heat

Depending on the amout of sugar you use, you csn risk burning yur sugar before the whole pot gets melted by doing it your way
