Back in the 1970's Time Life had a series of cookbooks called Foods of the World. Each book was a different country. My family and friends had an annual Foods of the World potluck dinner party. One year I made spanokopita and made my own phyllo dough. The instructions were in the Foods of the World book from Greece. I don't remember what was in the dough, but I do remember the method called for spreading the dough out using your hands because, according to the book, you could not get it thin enough using a roller. It was tricky business. Getting it thin enough to be translucent, but without tearing it. That was the one and only time I made it. This method looks WAY easier - and more fun! Thank you, Gemma!

Even if the filo dough dries out , don't throw it away. Mixed in a bowl with eggs, Greek yoghurt, a little milk, sugar , vanilla and Orange juice and orange zest and baked in the oven, it makes great portokalopita (orange pie). Or even tyropita (cheese pie) if you replace the sweet ingredients with cheeses. In fact, the drier the filo, the crunchier the pie us.
I worked at a Greek bakery for 2 years and it was my job to make filo rolls and triangles. It can be a difficult pastry to work with it if gets the slightest bit dry. Great video 😊

Ooh I've made filo dough from scratch before using another recipe, which included milk and an egg. This version would be a good alternative for those who not eat eggs or dairy. I made baklawa with mine (rolled into cyllinders) but the spanikopita sounds divine for a savory recipe. Will look it up ASAP. Also, I highly recommend brushing the layers with ghee (clarified butter) if you have any in the kitchen. I made it a couple of times and honestly it's not that hard, it just requires a bit of patience! It's very versatile and can be used for lots of recipes, so even a single batch can go a long way.

So glad you’ve added ingredient amounts to video - so helpful not to have to switch to website. However font size is too small - fractions are illegible with a white drop shadow.
Very nice recipie Gemma! I love the homemade "Greek fillo"! As Cypriot i love the Greek kitchen because is amazing and because we are Mediterranean countries! I have make so many times Greek fillo but never like these! I open one by one the fillo! Ho chef you follow and you learn these recipie? My mother and her sisters would make phyllo by hand stretching it out over the tops of pillows. A day or so after it dried, it was stored in dress boxes.

First time a phyllo actually sounds doable. To make things nore difficult though, do you have a suggestion for a gluten free version? With a celiac in the family I always try to accomodate
Yes, using an alternative gluten-free flour blend with psyllium husk, xanthan gum, or tapioca starch can create a gluten-free option. Substitute cup for cup. Hope this helps.
Hi Gemma, thank you for this recipe. You sure make it look easy to do and I'd love to try, but I don't get bread flour, where I live. What can I substitute?
For every 1 cup of flour, remove 1 to 1.5 teaspoons of flour and add the same volume of vital wheat gluten. Mix it up. This will equal about 135.6-137g APF and 3-4.4g vital wheat gluten in total (this is based on my experience of weight conversion, but the weight per volume might differ depending on the brands of flour and/or gluten). I am able to buy small portion (200g packet) gluten in my local baking shops, but you can just use APF if buying vital wheat gluten is not a viable option.
@@biggerbolderbaking I just read that taking out 1 tsp of the all purpose flour and adding 1 tsp vital wheat gluten gives you a substitute for bread flour. Vital wheat gluten is expensive, but considering that I don't need much, I'll give that a try. Hope this helps others who can't lay their hand on bread flour.

It may need more, or less the amount in the recipe. I recommend you hold back on the liquids when combining wet and dry ingredients. Gradually add the liquids until the dough comes together and reaches the same consistency as shown in the video. I hope this helps.
my mom makes this and she rolls it only with cornstarch. I can’t make this I can’t can’t can’t stand cornstarch texture each time i use it I have to clean my hands like 10 times🤣🤣 for every time I scoop it

It would be less wrong to refer to the pasta you use for making lasagna as "spaghetti" than it is to call kataifi "filo dough".
