Here's a rough step by step: First of all the rice he is using is PARBOILED rice, not regular rice, at 1:05 he adds a tiny bit of water and mixes it well into the rice, next at 2:00 he adds the water-mixed rice to a heated aluminum ''kadai'' and cooks it until 'light brown', he then transders the rice to another plate, at 3:40 he mentions to take a dish with holes (in this case aluminum) so that the salt that is used can be easily removed from the finished rice, at 4:13 he adds 500g of salt into the 'Kadai' and heats it up, then adds the rice, stir until puffed, transfer to the plate with holes and remove the salt.

Parboiled is putting twice the quantity of a rice then cook it with a pinch of salt for some time until boiled, once its boiled leave it for five minutes then strain then there is your parboiled rice. Then in the video he put cold water on a parboiled rice about 1 tbsp then give a mix then fried it without oil on medium heat until light brown then on another pan he added salt then pit the parboild rice little by little the he strained the rice with a aluminum plate with small holes that only the salt will come out then finished👌👌
Do you really need explanation? 🙃 first you dry fry rice to become more brown, than continue to fry it on hot salt until rice is puffy. Use medium heat both times. 😉🙃
