This is good rice! Reminds me of a tex-mex recipie that my mother usta' cooked for years, only we didn't have the ground beef. For those that can't eat beef, you can substitute par-broiled shredded chicken instead of beef. Do not top with shredded cheese. Top with real bacon crumbles, or you can use, "Bacon Bits" if you're lazy. If you like spicy, top with fresh Pico De Gallo. Just don't drown-it in Tobasco, nor Picante sauce. Serve with hot flour tortillas instead if bread. If you don't know how to warm 'em on the stove top burners, use the microwave. If you're Mexican, and don't know how to warm up flour tortillas on the stove top burners, turn-in your Mexican card.
It's actually fairly common! It's the only way to make Spanish/Mexican rice and it's a required step for risotto! It's sometimes referred to as rice pilaf, but that's not quite accurate. It's also why you don't always want to wash your rice, because the starches are necessary, particularly for risotto. A good simple Mexican rice is basically this with fewer steps. I love using Ro*Tel for Mexican rice because it's all there already, but you can just blend up the tomatoes, onions, peppers, cumin (please use cumin), garlic, and optionally (because some people don't like it) cilantro, then pour it in with some stock to make the rice up. EASILY better than takeout.
