Thats why they are called professionals. The piano is what they do for a living, its not just a hobby, and they spend the time that people work day jobs practicing piano. So of course they have a very good quality speed ratio
Probably not the main issue here, but: Depending on the size of the venue (especially at big festivals), clapping sounds out of sync just because the sound takes so long to get to the audience and back to the microphone. An example relevant for open air concerts: At 50m distance to the middle of the audience and 300m/s sound velocity thats already 2*1/6, so 1/3 of a second of delay if there are no dedicated audience mics.
